Easy Chicken and Broccoli Stir Fry

Celebrate the Year of the Dog with this Easy Chicken and Broccoli Stir Fry recipe! This delicious Weight Watchers inspired recipe needs to get on your menu soon. Marinated chicken breast, frozen broccoli, and an easy-to-make garlicky sauce make this a weeknight winner.


This might be a Weight Watchers inspired recipe, but don't let that keep you from making it! It's delicious whether you are on the program or not. Not only is it delicious, it's also super easy to make making it a wonderful choice for a quick weeknight meal. You will need a bit of planning with this one, as it does require time in a marinade.

The first time I made Easy Chicken and Broccoli Stir Fry, I followed the Weight Watchers recipe exactly. While it was good, I wanted something with more umph. So I tweaked the original recipe just a tad and was super happy with the end result...which is THIS recipe I'm sharing with you today.


Stir fry recipes make great choices for busy weeknights. The tend to be healthy because most have a good amount of vegetables in them and they tend to use very little oil. This Easy Chicken and Broccoli Stir Fry is no exception.

Easy Chicken and Broccoli Stir Fry

Easy Chicken and Broccoli Stir Fry
Easy Chicken and Broccoli Stir Fry is a delicious Weight Watchers inspired recipe is make with marinated chicken breast, frozen broccoli, and an easy-to-make garlicky sauce.

Ingredients

  • 1 large egg white
  • 2 TBSP sherry wine
  • 3 TBSP cornstarch, divided
  • 2 tsp. kosher salt
  • 1 pound, boneless, skinless chicken breasts, cut into thin slices
  • 1/2 cup chicken stock (fat free)
  • 3 TBSP soy sauce
  • 2 TBSP ketchup
  • 4 tsp. brown sugar
  • 2 tsp. sambal oelek (chili sauce)
  • 1/2 TBSP canola or corn oil
  • 2 cloves garlic, minced
  • 1 TBSP fresh ginger, minced
  • 1 package of frozen broccoli florets
  • 3 scallions, thinly sliced

Instructions

  1. Whisk together egg white, sherry wine, 2 1/2 TBSP cornstarch, and salt in a medium glass or plastic bowl.
  2. Add chicken, cover and refrigerate for 30 minutes up to overnight to marinate.
  3. In small bowl, dissolve 1/2 TBSP cornstarch in 1/2 cup chicken stock. Whisk in soy sauce, ketchup, brown sugar, and sambal oelek. Set aside.
  4. When chicken is done marinating, drain off excess liquid and discard the leftover marinade. Heat large nonstick skillet over med-high heat and add oil. When oil is shimmering, place the chicken in the hot pan in a single layer. Brown on one side, then turn and brown on the other. Remove chicken to plate and keep warm.
  5. Add garlic and ginger to the pan. Stir and cook until fragrant, about 1 min. being careful not to burn the garlic. Add in frozen broccoli and stir and cook for 1 more minute. Add in sauce mixture and stir until it comes to a boil. Stir for one more minute.
  6. Add chicken back into pan and turn heat down to med. Continue to cook until chicken is done and broccoli is crisp tender. Take off heat. Sprinkle with scallions. Serve with rice, if desired.
Yield: 6 servings
Prep Time: 00 hrs. 40 mins.
Cook time: 00 hrs. 15 mins.
Total time: 55 mins.
