Herbed New Potatoes




A delicious accompaniment to just about any meat, fish or poultry.  Easy to prepare and full of wholesome goodness too!  We like it served next to grilled beef or chicken. 


This dish is especially great when you can use those herbs you planted outside in the spring!  It is another recipe I make often around here, because it's tasty and so darn quick.  I love the addition of the fresh herbs!

I used to have a sensor microwave...which I absolutely adored, because I could put the cut up potatoes into a glass covered dish and just push the fresh vegetable button, and they would cook to perfection.  But sadly, that microwave broke and I am at the moment, using a replacement one we already had that does have a fresh vegetable button, but is not a sensor microwave. ( it simply puts in a preset time when I press it )   When we finally redo the kitchen appliances...I WILL be getting another sensor microwave for sure!  Until then, I have resorted to steaming the potatoes in a steamer basket on the stove when I make these...which will produce a good result...but still not as good as the sensor microwave did! 


Herbed New Potatoes

Servings - 4   Serving Size - 1/4th of recipe or approx. 4 oz.   Points Plus per serving - 3 points+
Calories - 104,   Total Fat - 2.7g,    Carb. - 18g,   Protein - 2.1g,   Fiber - 1.9g


16 oz. new potatoes, scrubbed and quartered ( or cut smaller if potatoes are larger...just make all pieces uniform sized) 
1 TBS. lemon juice
1 TBS. lemon zest
1/4 cup fresh chopped flat leaf parsley
1/4 cup fresh chopped chives
2 TBS. fresh chopped dill
salt and fresh ground black pepper, to taste

1.  Cook the potatoes until they are just fork tender, either in the microwave or steamed in a steamer basket on the stove.  

2.  Combine the melted spread, lemon juice, lemon zest and herbs.  Pour onto the hot potatoes and gently mix to combine.  Season with salt and pepper to taste.

We had a fantastic weekend weather wise....spent most of the weekend playing catch up with yard work since the rain has put us so far behind on getting all the spring work done.  I finally got some herbs and annuals potted.  What did you do this weekend?

  3. I love adding zest to potatoes, just brightens them up!

    We had great weather too - although I was a bum yesterday - I watched almost the whole White Sox game and didn't feel guilty like I "should" be doing something more constructive!
