Easy Summer Fruit Salad

This Easy Summer Fruit Salad is delightfully different from your ordinary fruit salad.  Sweet melon, refreshing cucumber and crisp apple combine with lime and mint for a taste sensation that makes a great side dish or a snack anytime of the day!

This salad, an idea borrowed from a WW member at my last meeting, is an interesting blend of summer flavors.  For all intents and purposes, it is a completely zero point food.  It's a healthy and delicious choice!

I have to admit, I was a little skeptical of the cucumber in this salad, but it works really well!  I love cucumber, so it didn't surprise me that I liked it in here!

While apples are not technically "summer fruits" they do work well in this salad.  I think you could substitute fresh pineapple, if you like though.  I think pineapple is another flavor that would make this salad unique.  Whether you use apples or pineapples, this salad is one you've just got to give a try! It's so refreshing!

Easy Summer Fruit Salad

Sweet melon, refreshing cucumber and crisp apple combine with lime and mint for a taste sensation that makes a great side dish or a snack anytime of the day!
prep time: 10 minscook time: total time: 10 mins

ingredients:


  • 3 cups fresh watermelon, small diced
  • 1 long English cucumber, small diced
  • 1 large apple, cored and small diced (I used a Granny Smith)
  • Juice of one lime
  • 1 TBS lime zest
  • 2 TBS fresh mint, chopped
  • pinch of salt (optional)

instructions


  1. Combine all ingredients in large bowl. Cover and refrigerate for about an hour to allow flavors to blend. Gently stir and enjoy!

After such an incredibly harsh winter and an equally miserable, cold and wet spring, we have finally had some amazing weather this past week, and I have taken every minute to take advantage of it!!  I finished planting all my herbs....basil, thyme, rosemary, flat leaf parsley,  ( chives and oregano were already in the ground from previous years).  I also put in three tomato plants ( one grape, one big boy and one heirloom) and four pepper plants...two jalapeno and two sweet red.  I put in all my annual flowers, which ended up being purple petunias this year!  

I made good on attending my WW meeting this past week as well...got several outdoor walks in, and was rewarded by a small loss on the scale this week.  



I leave you with this sweet picture of my kitty.  She is an indoor cat, but when the weather is just right, she escapes out the back door and enjoys the greenery around the patio.  :)

  6. awww, love the picture of your kitty and I'm hoping your puppy makes it onto the dog cookies post! I love animals so much, esp dogs. This salad is unique but I imagine it's quite refreshing! I have a crazy watermelon salad with tomato in it that's sweet, sour, and salty so I know I'd like this one too--I like things that are a little different. Good job on the loss this week--keep up the good work!

  12. I love the contrast of crunchy cucumber and apple with sweet melon. Love the kitty too. Mine escape when they can for the same reason and I love watching them enjoy themselves.
