Light Laughing Cow® Mac n'Cheese

This Laughing Cow® Mac n' Cheese recipe is full of creamy cheesy goodness. Made on the stove top, it's a one pot mac and cheese that makes a perfect main dish or side dish for any meal! If you are a fan of The Laughing Cow® cheese wedges, then this easy mac and cheese recipe is for YOU!

Who doesn't love the tangy creaminess of Laughing Cow Cheese wedges?


The other day I received a lovely package from the people at Laughing Cow Cheese! (The Laughing Cow® provided me with product for this review for free. However, the opinions and photos are exclusively mine)


What was inside was a recipe for creamy mac and cheese and the ingredients to make it! Having used Laughing Cow Cheese wedges in the past many times, I was really excited to try this recipe. In fact, a package of Laughing Cow Cheese is almost ALWAYS in my fridge.

This mac and cheese made with Laughing Cow couldn't be any easier. It makes a creamy mac and cheese that is mildly flavored. If you like the cheese sauce more loose, you can add more milk. 


You can use original laughing cow cheese wedges in this recipe, or lighten it up with the light version. Or you can get fancy and use some of the great Laughing Cow Cheese flavors like Creamy Spicy Pepper Jack

However, the recipe in the recipe card now reflects using higher fat content ingredients and the nutritional information reflects those changes. 

Light Laughing Cow Mac n'Cheese Ingredients

  • 8 oz. uncooked whole wheat rotini noodles ( I used 365 whole wheat fusilli ) 
  • 3 wedges of The Laughing Cow® Light Creamy Swiss Cheese
  • 3/4 cup reduced fat sharp cheddar cheese
  • 1/2 cup skim milk
  • 1 TBS. unsalted butter
  • salt and pepper, to taste
  • dash garlic powder ( optional ) 
Follow cooking directions as described in recipe card below. 

Servings - 4   Serving Size - approx. 1 cup (1/4th of recipe)   Points Plus per Serving - 7 Points+

How to make Laughing Cow Mac n' Cheese

Begin by cooking pasta according to the directions on the package. Drain pasta. 

In same pot you cooked pasta in, add in the Laughing Cow Cheese wedges, milk, shredded cheese, and butter. I use the heat from the stove with the burner off to help melt everything.

Next, add the hot pasta and stir until the cheese is completly melted. Season with salt and pepper, and garlic powder, if using.

Even with the few changes I made to lighten it up above...this dish is a keeper.  The sauce is creamy and mildly cheesy.  My boys, including my husband, gave this mac n' cheese two thumbs up on taste.  The preparation could not be easier either. Which is always a bonus. If you haven't cooked with Laughing Cow Cheese before, this is a great recipe to start with.

A one pot Mac and Cheese recipe made with Laughing Cow cheese wedges.

Ingredients

  • 8 oz. uncooked pasta
  • 4 wedges of The Laughing Cow® Creamy Swiss Cheese
  • 2 TBS. unsalted butter
  • 1/2 cup milk
  • 3/4 cup shredded sharp cheddar cheese
  • salt and pepper, to taste
  • dash garlic powder ( optional )

Instructions

  1. Cook pasta according to package directions. Drain in colonder.
  2. To hot pan, add the Laughing Cow Cheese wedges, butter, milk, and cheddar cheese. Let the heat of the pan begin to melt the mixture.
  3. Add the pasta back to the pan and stir until all the cheeses and butter are completely melted and the pasta is covered in sauce. You can add more milk if needed.
  4. Season with salt, pepper, and garlic powder, if using.

  14. I just made this & it didn't turn out so great. I let all the cheese melt before adding back in the noodles & as it melted, it ended up clumping. So it's not creamy at all. Maybe I should have added the pasta back in sooner. It still tastes ok, just a strange consistency. I may try this again w/ elbow macaroni & add it back in before all the cheese is melted.
