Cheesy Hash Brown Potato Casserole

Tis' the season to celebrate!  And celebrations call for FOOD!  I can't think of a better way to impress my guests and family than with a beautiful succulent ham and this delicious Cheesy Hash Brown Potato Casserole!

I'll be honest, when it comes to holiday hams, I'm a bit of a self-proclaimed ham snob.  I like it smoky, not too salty and spiral sliced ON the bone. In my family, we serve ham at Easter, Thanksgiving, and Christmas and really any occasion were I need to feed a crowd. I normally purchase my holiday hams from one of those famous ham chains, and I've generally been very happy with it...but they aren't that economical when I need enough ham to feed my large crowd.  

I recently had the opportunity to try Hormel's Cure 81 Fully Cooked Bone-In Cherrywood Smoked Spiral Sliced Ham and I was super impressed with it!  It's tightly vacuumed sealed for freshness and when I opened the seal, my nose was greeted with the most wonderful aroma of smokey goodness. It's also priced quite reasonably.

I normally serve my ham at room temperature, but this Hormel Cure 81 Bone-In Ham came with a glaze packet I wanted to try and instructions for heating.  I only needed to add a few pantry ingredients to the dry packet that came with the roast to make a Mustard Honey Glaze. I followed the instructions in the ham to heat and glaze it for the perfect holiday ham. 

What a gorgeous ham it turned out to be!  Wow!  I was loving the smells in my kitchen and I knew my guests and family would love this ham as much as I did.  I do admit to picking a corner off the ham to taste test it before my guests arrived and my taste buds were rewarded with wonderful flavor!

Whenever I serve ham, I like to make Cheesy Hash Brown Potato Casserole as an accompaniment. Cheesy potatoes go so well with the sweet, saltiness of ham.  You are probably familiar with this cheesy potato casserole recipe (aka Funeral Potatoes)...it's been around for some time.  But, of course, over the years I've put my own spin on it, making it my own.

I make a wonderful Macaroni and Cheese each year during the holidays that uses a combination of Gruyere cheese and sharp cheddar cheese and I just love that combo. I've adapted this potato casserole recipe to use both cheeses too.  The combination gives the potatoes a little more sophisticated flavor, I think. (If you aren't a fan of Gruyere or you can't find it, you can also use all sharp cheddar.)  I also like to use Panko bread crumbs for the topping.  They are so light and crispy and accent this casserole perfectly!

It's really easy to put the casserole together thanks to frozen hash browns. Just make sure you defrost the hash browns before adding them to the cheese sauce.  If you don't want to defrost them, that's fine too, but remember you will need to add an additional 15- 20 minutes of bake time so the potatoes cook properly.

Cheesy Hash Brown Potato Casserole

Cheesy Hash Brown Potato Casserole
Creamy potato casserole with Gruyere and Cheddar cheese that pairs perfectly with your holiday ham!

Ingredients

  • 1 - 32 oz. package of frozen diced hash brown potatoes, defrosted
  • 1 - 10 oz. can of condensed cream of celery, chicken, or cheese soup
  • 1 - 16 oz. container of reduced fat sour cream
  • 1 tsp. kosher salt
  • fresh ground black pepper, to taste
  • 2 TBS dried onion ( or 1/2 tsp. onion powder)
  • 1/4 cup unsalted butter, melted
  • 4 oz. of shredded Gruyere cheese (reserve a few TBS for topping) or replace with Sharp cheddar
  • 4 oz. of shredded sharp cheddar cheese (reserve a few TBS for topping)
  • 1 cup plain panko breadcrumbs + 2 TBS melted butter

Instructions

  1. Preheat oven to 350 degrees F. In large bowl, combine the condensed cream soup of your choice, sour cream, salt, pepper, dried onion (or onion powder), and melted 1/4 cup of butter. Mix well.
  2. Add in cheeses and mix. Add in potatoes and stir to coat.
  3. Spray a 9 x 13" baking dish with cooking spray and pour potato mixture. Smooth top down evenly. 
  4. Sprinkle casserole with reserved cheeses. 
  5. Top with Panko/butter mixture.
  6. Bake in oven, uncovered until hot and bubbly and topping is browned about 45 - 50 minutes. Let sit for 5 minutes before serving.
Yield: 10 servings
Prep Time: 00 hrs. 10 mins.
Cook time: 00 hrs. 50 mins.
Total time: 60 mins.

I purchased my Hormel Cure 81 Bone-In Spiral Sliced Cherrywood Smoked Ham from Walmart.  I found it both in a cooler near the dairy aisle and a cooler with the fresh meats.

    1. I am in love with dried onions. I use them a lot. It's so much easier then dicing up an onion and they are packed with onion flavor. They also add no unnecessary moisture to dishes you don't want "wet". They are super convenient too. I love them in this casserole.
