Chewy Cherry Cowboy Cookies


Chewy Cherry Cowboy Cookies are bursting with the good stuff...chocolate chips, pecans, coconut, oats, and dried cherries!  You and your family will LOVE them because they are a pimped up chocolate chip cookie recipe that everyone loves!



It's time for the Secret Recipe Club reveal for April and this month I was assigned to the delicious blog A Spoonful of Thyme. I love Kate's philosophy of always being able to find the "thyme" to cook and enjoy family meals! As a mother of three grown children, eating a meal around the family table was always a priority for me as my kids were growing up. And to this day, I still make a priority in my family, even though most nights these days, it's just me and my husband.

A Spoonful of Thyme is full of so many recipes that really appealed to me!  I had a very difficult time narrowing my choice for today's reveal down to one recipe.  I have Orzo Chicken Salad and White Pizzas with Arugula bookmarked for the future and am looking forward to trying them.  However, for today's reveal, I made Kate's recipe for Cowboy Cookies.

When the boys come home from college for breaks, I like to have fresh baked cookies on hand for them. It just so happened, both boys were going to be home for awhile last week and these cookies were just begging to be made!

We loved them! They are so full of so many yummy things! I did put my mark on the recipe by adding dried cherries to the batter and using a mix of milk and semi-sweet chips in place of the semi-sweet chocolate chunks in the original recipe. If you don't have dried cherries, try substituting dried cranberries instead! So good either way!

This recipe made enough cookies for the boys to snack on when they were home and to take back to school with them in a little care package from home.  Give them a try!  If you are a chocolate chip cookie lover, you will love this chewy, yummy version!

Chewy Cherry Cowboy Cookies

Chewy Cowboy Cookies are bursting with all the good stuff...chocolate chips, pecans, coconut, oats, and dried cherries! You and your family will LOVE these easy drop cookies.

ingredients:

  • 2 cups all purpose flour
  • 1 tsp. baking soda
  • 1 tsp. kosher salt
  • 1/2 tsp. baking powder
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup light brown sugar, packed
  • 2 large eggs
  • 1 tsp. pure vanilla extract
  • 1 1/2 cups old-fashioned oats
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup milk chocolate chips
  • 1/2 cup coarsely chopped pecans
  • 1/2 cup shredded coconut (Kate used unsweetened, but I used sweetened)
  • 1/2 cup dried cherries

How to cook Chewy Cherry Cowboy Cookies

  1. Preheat oven to 350 degrees. Line cookie sheets with parchment or use a silpat.
  2. In medium bowl, combine the flour, baking soda, salt, and baking powder. Set aside.
  3. In large bowl, beat the butter and the sugars with an electric mixer until light and fluffy (about 3 minutes). Add one egg at a time, beating after each addition. Continue to beat until well combined. Add in the vanilla.
  4. Mix in the flour mixture into the butter mixture with mixer on low until combined. Stir in the oats, chips, pecans, coconut and dried cherries.
  5. Using a small cookie scoop, drop cookies onto prepared cookie sheets spacing about 2" apart.
  6. Bake in oven about 10 - 12 minutes, or until edges just start to brown. Remove from oven and allow to cool on cookie sheet for about 2 minutes before removing to wire racks to cool completely.

NOTES:

Remember to allow cookies to cool for 2 minutes before removing them from the baking sheet. This will allow them to set.

  11. I have one grandson that is allergic to coconut. Could I leave it out of the recipe and have the same results?

    1. I've not made them without the coconut, but I don't see why it wouldn't be fine to omit it as an ingredient. :)

    2. Unknown: Of course you can leave the coconut out! It will not alter that recipe. Add extra cherries, oatmeal, etc to equal the 1/2 cup, if you want but you don't have too...

  12. These were great. I made the dough the night before and refrigerated until baking. The dough is very dense, but they turned out beautifully. I used all dark chocolate chips and upped the cherries to 1 cup. I also coarsely chopped the cherries to better distribute them throughout the batter.
