Peach Caprese Salad

Peach Caprese Salad is a delicious twist on a classic!  Fresh peaches, mozzarella, mint and basil are drizzled with a delightful lime vinaigrette and will have your taste buds dancing! This sweet and savory salad is the perfect way to enjoy the peaches at market right now.

It's time for my June installment of The Secret Recipe Club.  This month I was assigned to the delicious blog, Little Bit of Everything, written by Nebraska native, Julie.  Julie's blog is truly a collection of a "little bit of everything" that has something for everyone! 

A few recipes that caught my eye were:  Brown Butter Salted Caramel Rice Krispie Bars, Bacon Onion and Cheese Stuffed Burgers, and (just in time for the hot weather) Cake Batter Ice Cream!  But ultimately, the recipe that grabbed my attention most was this one for Peach Caprese Salad.

I've been buying fresh peaches for a few weeks now, and I must say, they have been excellent. Sweet, juicy and everything you expect from a fresh peach. This recipe is really pure genius. The sweet peaches go with the fresh basil so nicely, it's my new obsession!  Not that I don't love a good tomato-basil-mozzarella caprese salad...it's just that this twist sort of takes that classic salad to new heights!  

The lime vinaigrette makes the perfect dressing for this salad and as the salad sits, the dressing mingles with the peach juices and becomes even more amazing.

If you can't find the fresh mozzarella pearls, feel free to substitute diced fresh mozzarella.  That will work just fine in this recipe too! 

This salad just screams summer to me.  So fresh and light and tasty!  I served it alongside some simple grilled chicken for a wonderful quick, easy and light summer dinner.  You've got to give this recipe a try!  

Peach Caprese Salad

Peach Caprese Salad
Fresh peaches, fresh mozzarella cheese, fresh mint and fresh basil combine with a lime vinaigrette for a tasty twist on a classic summer salad.

Ingredients

  • For the Vinaigrette:
  • juice and zest of 1 lime
  • 1 TBS white vinegar
  • 1 TBS honey
  • 1 TBS water
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 4 TBS extra virgin olive oil
  • For the Salad:
  • 4 ounces fresh mozzarella pearls
  • 4 - 5 ripe peaches, unpeeled, cut into wedges
  • 6 TBS fresh basil leaves, cut into strips
  • 3 TBS mint leaves, cut into strips

Instructions

  1. Add ingredients up to oil for vinaigrette to a medium bowl. Whisk together to combine. Whisk in oil.
  2. Add all ingredients for salad to bowl with vinaigrette. Toss to coat. You can serve immediately, or allow to sit for about 15 - 20 minutes to allow flavors to blend.
Yield: 4 servings
Prep Time: 00 hrs. 10 mins.
Cook time: 00 hrs. 20 mins.
Total time: 30 mins.

  7. I love making peach caprese salad! I usually wait until July when the cling-free peaches are at their sweetest. Stop on over and search for my version that I made; I'll need to try it with your vinaigrette, Renee! I make this a lot when peaches are so fresh! Happy Thursday!
