Old Fashioned Fresh Apple Cake

It's Fall in Ohio and you know what that means?! Apple season is in full swing! With all the fresh apples available at the markets, a recipe for Old Fashioned Fresh Apple Cake seemed appropriate. This one-bowl fresh apple cake bursting with big chunks of fresh apples could not be any easier or tastier!

This easy recipe for Old Fashioned Fresh Apple Cake is the perfect ending to any Fall dinner or a delicious treat in the middle of the day. Because this cake is made in one bowl, clean up is easy too! I actually stumbled across this recipe from a friend's feed on Facebook.  I like this recipe because it uses a little less oil than most recipes like this. But, the cake comes out moist and tender!

I used a combination of Fugi and Honeycrisp apples in this cake, but you can use whatever apple variety you like best. There are lots of apple varieties out this time of year, and they can vary widely from location to location. Even if the charts say a certain type of apple isn't good for baking, you may find you like it! Old Fashioned Fresh Apple Cake
Easy to make one bowl cake made with fresh apples and spices that is a perfect taste of Fall! 

Ingredients

  • 2 large eggs
  • 1 1/2 cups granulated sugar
  • 1/2 cup canola oil
  • 2 TBS fresh lemon juice
  • 2 cups all purpose flour
  • 2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground ginger
  • 1/4 tsp. fresh grated nutmeg
  • 6-7 medium fresh apples (such as Fugi or Honeycrisp) peeled, cored and roughly chopped
  • powdered sugar, for dusting

Instructions

  1. Preheat oven to 350 degrees F. Spray a 9" x 13" baking pan with cooking spray. Set aside. 
  2. In large bowl, whisk together the eggs, sugar, oil, and lemon juice.
  3. Sift in flour, baking soda, salt, cinnamon, ginger and nutmeg until just combined with the wet ingredients.
  4. Fold in the fresh apples.
  5. Pour mixture into prepared pan and level off. Bake in oven for 45 -55 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool on wire rack. Can be served warm with ice cream, if desired. When cooled completely, dust with powdered sugar and store in refrigerator.

Cook time: 00 hrs. 55 mins.
Total time: 65 mins.
