Smoked Sausage and Pepper Pasta Skillet

I'm all about making the most of my time with easy dinner ideas! Less fuss and less stress is a winning plan in my book! Easy pasta recipes like this one are my go to when I'm short on time. Who has time to meal plan and execute that plan every single day? Life has a way of getting in the way of things and plans change, that's when recipes like this Smoked Sausage and Pepper Pasta Skillet come into play.


Sausage and Peppers with Pasta

I got the inspiration for this recipe from Weight Watchers. Since I've started back on the program several months ago, I often browse the online recipes for easy dinner ideas. I knew this would be a winner as soon as I saw it.

I almost always have some fully cooked turkey smoked sausage in the freezer. It's one of my easy, go-to ingredients for busy nights. Sometimes I serve it as is, heated up, alongside a veggie and a whole grain. However, there are other times I like to use it in recipes. I've used it in soup recipes like I did in this Creamy Potato, White Cheddar and Kielbasa Soup and in this easy Skillet Cheesy Sausage Chili Pie. Because the smoked sausage is fully cooked, it makes pulling off quick and easy recipes a snap. It also gives recipes such great flavor.

Recipe for Sausage and Peppers Pasta

We LOVED this recipe! So easy and so full of flavor! It's going to become a regular rotation on my menus. You can adjust the heat of the sauce by using as little or as much red pepper flakes as you like. Or, omit them entirely if spice isn't your thing.

Fresh basil really brings this dish to life, so make sure you don't leave it out! If you can spare the calories, this Smoked Sausage and Pepper Pasta Skillet dish would be great topped with a little, freshly grated, Parmesan cheese.

Smoked Sausage and Pepper Pasta Skillet

Smoked Sausage and Pepper Pasta Skillet
Rotini Pasta, onions, peppers, and smoked sausage are bathed in a spicy tomato sauce and topped with fresh basil for an easy weeknight dinner.

Ingredients

  • 8 oz. uncooked pasta (I used rotini)
  • 2 tsp. olive oil
  • 1- 14 oz. package of fully cooked turkey smoked sausage ( I like Hillshire Farm® Turkey Smoked Sausage)
  • 2 medium bell peppers cut into 2" strips (red, green, orange, or yellow or a combo of them)
  • 1 medium sweet onion, cut in half and then slices
  • 2 cloves garlic, minced
  • 1/2 cup red wine
  • 28 oz. can of crushed tomatoes
  • 1/2 tsp. red pepper flakes (or to taste)
  • Kosher salt and pepper, to taste
  • 1/2 cup fresh basil, chopped

Instructions

  1. Cook pasta to package directions. Drain and set aside.
  2. While pasta is cooking, add olive oil to large nonstick skillet and heat over med/high heat until it begins to shimmer. Add in sliced sausage and cook for about 3 minutes. Add in peppers, onions, and garlic. Stir and cook for another 3 - 5 minutes, or until veggies begin to soften.
  3. Add wine to skillet and cook until most of it has evaporated. Then, add in the crushed tomatoes, red pepper, and salt and pepper to pan. Bring to boil, then reduce to simmer. Cover and cook until veggies are tender. About 10 min.
  4. Stir in cooked pasta and fresh basil. Serve immediately.
Yield: 6 servings
Prep Time: 00 hrs. 10 mins.
Cook time: 00 hrs. 25 mins.
Total time: 35 mins.
