Process it and it is a semi-frozen delicious sherbet. The down side is if you then freeze it, it gets grainy. If I do it, I would use non-fat Greek yogurt, because that's all I buy and it's what's easiest for me to find. My mother used to make sherbet in aluminum ice trays with the partitions removed. It involved mashing it frequently until it was frozen at the proper consistency.
