Deli Style Mixed Bean Salad


It's picnic season! And I can't think of a better picnic food then this Mixed Bean Salad. This recipe for mixed bean salad (aka three bean salad) is a cornucopia of beans that's not only super easy to make, but also healthy and delicious. Canned green beans along with other canned beans and a few fresh ingredients are marinated overnight in a zesty vinaigrette type dressing for an easy picnic food or pot luck recipe that everyone will love!

How to make Mixed Bean Salad

It's probably one of the easiest recipes I have on the blog to date. If you can open canned green beans, then you can make this recipe. The ingredient list might look long, but it's a simple recipe that requires you to just mix all the ingredients together.

Make sure you give yourself enough time to allow the salad to marinate in the zesty vinaigrette. 24 hours is best!

A word about canned green bean recipes

Let me start off by saying, I'm not a huge fan of canned green beans as they are as a side dish. They tend to need a little help in the flavor department. But, when canned green beans are used in recipes like my Cracker Barrel Copycat Country Style Green Beans, they take on a whole new personality.

The same is true for this Mixed Bean Salad recipe. I really think this is what canned green beans were made to do. Be turned into delicious a delicious canned green bean recipe with the addition of flavorful ingredients. I really do!

For this Mixed Bean Salad recipe, I found these Del Monte® Green and Wax Bean Blend. I love the contrast of colors. But, if you can't find the bean blend, 2 cans of regular canned green beans will do the trick!

Mixed Bean Salad makes the perfect Picnic food!

Mixed Bean Salad is perfect for all the Spring/Summer events you might have planned. It's perfect picnic food, because you don't need to keep it cold or hot. I know I'm always worried about how to keep picnic food hot or how to keep picnic food cold.  This salad is actually best served at room temperature. Mixed Bean Salad is also great for potlucks, BBQ's, or for any occasion. This Mixed Bean Salad is low fat, full of fiber, and full of veggies.

Mixed Bean Salad is a cornucopia of beans that's not only super easy to make, but also healthy and delicious. Canned green beans along with other canned beans and a few fresh ingredients are marinated overnight in a zesty vinaigrette type dressing.

Ingredients

  • 2 - 14.5 oz. cans of cut green and wax bean blend OR cut green beans
  • 1- 15.5 oz. can garbanzo beans, drained and rinsed
  • 1- 14.5 oz. can of black beans, drained and rinsed
  • 1- 14.5 oz. can of red kidney beans, drained and rinsed
  • 1/2 cup finely chopped red pepper
  • 1/2 cup finely chopped celery
  • 1/2 cup finely chopped onion
  • 1/2 cup diced chopped carrot
  • 1/4 cup extra virgin olive oil
  • 3/4 cup red wine vinegar
  • 3 TBSP granulated sugar (or more to taste)
  • salt and pepper, to taste

Instructions

  1. In large bowl, combine both cans of green beans, garbanzo beans, black beans, kidney beans, red pepper, celery, onion, and carrot.
  2. In small bowl, combine the olive oil, vinegar, and sugar and mix until sugar is dissolved. Pour the dressing over the bean mixture. Add salt and pepper, as desired. Put bean salad in container with a lid, and store to marinade for at least 24 hours prior to serving in refrigerator. Occasionally stir up the salad while marinating. Allow to come to room temperature before serving.
