It's hard for me to answer this question because you say you used a recipe from a different blogger, and I do not know what that recipe is. I haven't made these in awhile, but I was on a huge kick making this recipe for a long time over and over again, and always had success with the one above. They aren't super fluffy, but more like tollhouse cookies as far as height. Coconut oil should measure exactly like butter in recipes. No change. I've not made recipes with melted coconut oil, so I can't answer that question. I have only used it solid. I made a choc chip cookie recipe from a different blogger, followed directions exactly and the cookies came out completely flat (so I crumbled them up and will be putting them in fudge). any tips how to avoid this? I did use the coconut oil directly out of the jar, per instructions. Also for recipes that call for melted coconut oil, do you measure it out - i e 1/2 cup before you melt, or melt and then measure? The few that didn't fall apart when taking off the sheet fell apart when I picked them up. I don't normally chill the dough, unless the coconut oil is liquid at room temp because it's hot in the kitchen. Then I just chill for 20 min or so. The recipe I got may have gotten their recipe from this site, because, yes, the ingredients look very much the same. <br /><br />I started out by decreasing the amount of sugar. Besides trying to lessen the overall amount of sugar in the recipe. By doing so, I likely decreased the overall moisture in the cookie, helping mine to not be flat. I've made them many, many times now, and I never have the problem of a very flat cookie. I use a regular sized cookie dough scoop also, and then press them down ever so slightly before I bake. <br /><br />I have even used half butter half coconut oil to make them. They are still good, just not as soft and chewy using all coconut oil. A little different flavor as well. They don't go flat either. <br /><br />If you used my version and they were still flat, perhaps chilling the dough a bit might help? <br /><br />Thanks for your review! I used the original one, but my cookies really flattened. Did you make try one first, or did you change the brown sugar amount before you even made them? I'm wondering if that would make a difference. Her cookies are nice and high, but then she used a huge scoop. I just used a regular cookie scoop.
