Coconut Custard Pie

Coconut Custard Pie is a treat that makes me think of Spring! Toasted coconut in a rich and creamy custard base topped with fresh whipped cream is a company worthy pie that's so easy to make! I can't think of a better way to welcome in Spring and say goodbye to winter than with this coconut pie!

The best easy Coconut Custard Pie recipe!

This coconut custard pie is one of my very favorite recipes on this blog.  Coconut Custard Pie is not to be confused with Coconut Cream Pie. Coconut Custard Pie has a baked sweet custard filling that's accented with toasted coconut. Coconut Cream Pie, on the other hand, has whipped cream based filling. Both are delicious treats, but I personally prefer this custard version over the cream version.

Coconut Custard Pie is a delicious treat that could not be any easier to make. It starts with a store-bought frozen crust.  I love the convenience of store-bought frozen pie crusts! I love to use them in savory pies, like my Mushroom Swiss Quiche, but I also love them in sweet recipes like this Coconut Custard Pie! You could use a homemade pie crust in this recipe, but I find the frozen crusts work perfectly and they taste great too!

The filling is a standard custard filling (eggs, sugar, and milk) whipped together with a whisk and accented with toasted coconut. Super simple. The coconut custard filling tastes very decadent, but to keep it a bit lighter, it's made with 2% milk. This is a very lightly sweet pie, but with the addition of the sweetened coconut, I think it's just perfect.

The hardest thing about making this coconut pie is the wait.  Once it's baked, you'll need to let it cool to room temperature and then refrigerate it for several hours.

Now THAT takes some patience!  But trust me, it's so worth the wait. Once you try this coconut custard pie, it will be your go to recipe for coconut pie!

Coconut Custard Pie, Coconut Custard, Coconut Custard Pie Recipe
Yield: 8 servings

Coconut Custard Pie

prep time: 10 minscook time: 50 minstotal time: 60 mins
Custard filling is whipped together, poured into a prepared pie crust, and accented with toasted coconut for a delicious Coconut Custard Pie treat perfect for Easter or an anytime dessert!


  • 1 unbaked 9" frozen pie crust, defrosted according to the package directions
  • 2 cups 2% milk
  • 4 large eggs, room temperature
  • 1 tsp. pure vanilla extract
  • 1/2 tsp. coconut extract
  • pinch of kosher salt
  • 1/2 cup granulated sugar
  • 2/3 cup sweetened flaked coconut, divided
  • Whipped cream for garnish, optional


  1. Preheat oven to 350 degrees F. Once oven comes to temp, Spread coconut out on a small baking sheet and toast in oven for 8 - 10 minutes, or until lightly toasted. Set aside.
  2. In small saucepan, heat milk until just scald. Take off heat. (you can also do this in the microwave). Set aside.
  3. In large bowl, whisk eggs, extracts, salt and sugar together. While continuing to whisk, add about 1/4 cup of warm milk to help temper eggs. Continue to whisk in remaining milk until combined.
  4. Pour custard mixture into pie crust. Take all but 3 TBSP of the lightly toasted coconut and sprinkle onto custard. Set aside the 3 TBSP of the toasted coconut for later.
  5. Bake pie in oven for 45 - 50 minutes or until the custard is set. Remove from oven and allow to cool to room temperature. Once cooled, cover with plastic wrap and place in refrigerator for at least 2 - 3 hours or overnight.
  6. Just before serving, garnish with whipped cream and sprinkle reserved toasted coconut on pie.
