Honey Dijon Roasted Carrots

Honey Dijon Roasted Carrots make a great healthy side dish!  Fresh carrots are tossed with a few simple ingredients for a taste that can't be beat!

I know, according to the calendar, we still have some time before spring arrives, but man, everyday I am "feeling it"!  The birds are chirping and the days are getting longer.  Some of the veggies I think of when spring arrives are asparagus, onions, peas and yes, carrots!

I think carrots often get looked over as a veggie of choice.  Sure, they are almost as important as onions and garlic, in some recipes, but we don't eat them on their own very often.  At least that's how it is in my house...so today...I'm paying tribute to the carrot!

Carrots are good for you! They are packed with vitamin A, antioxidants ,and supply dietary fiber. But most importantly, they taste great!

Roasted Carrots

If you know me, you know my favorite way to enjoy ANY vegetable is roasted in the oven.  Roasting brings out the sweetness in veggies and does so particularly for root vegetables like carrots.  Carrots are great coated in a little olive oil and salt and pepper and roasted until done, but they are even better with the addition of honey and Dijon mustard! It just elevates them to another flavor level. 

I finish this dish with a squeeze of lemon just before serving to brighten it up just a bit and take the common carrot to new heights!

Honey Dijon Roasted Carrots

Honey Dijon Roasted Carrots
Oven roasted carrots are flavored with sweet honey and zippy Dijon mustard for a great healthy side dish!

Ingredients

  • 1 lb. full-sized carrots, peeled and cut on the diagonal into 1/2" slices
  • 1 TBS olive oil
  • 2 tsp. Dijon mustard
  • 1 TBS honey
  • Kosher salt and fresh ground black pepper, to taste
  • juice of 1/2 a lemon, if desired

Instructions

  1. Heat oven to 425 degrees F. Line a large edged sheet pan with parchment.
  2. In large bowl, whisk together olive oil, mustard, and honey. Add carrots and coat well. Dump onto prepared sheet pan and spread into a single layer, making sure not to crowd the carrots in the pan. Season with salt and pepper.
  3. Bake in oven for about 15 - 20 minutes, depending on desired doneness.
Yield: 4 servings
Prep Time: 00 hrs. 10 mins.
Cook time: 00 hrs. 20 mins.
Total time: 30 mins.

  1. I am in absolute agreement that roasted veggies rock! I have always loved cooked carrots, I think they taste sweeter when cooked. This recipe sounds delish!

  3. Yum! I think I've made this recipe before---without the lemon! So good! In fact, it's in my post queue---waiting for the right time to share. This would be the perfect side for Easter.
