Easy Apricot Cheesecake Pie (No Bake)

This easy Apricot Cheesecake Pie is an easy no bake dessert recipe made with a handful of ingredients. The creamy filling is made with cream cheese, fruit spread, and Cool Whip then spread in a purchased graham cracker crust and refrigerated until set. Sweet treats don't get much easier than this.

With the holiday weekend fast approaching, you might be on the lookout for a quick and easy no bake dessert.



If you are, this fruity cheesecake pie is your answer! 

Super easy because it's made with just a few ingredients and a store-bought premade graham cracker crust. 

Quick because you just whip all the ingredients together and chill.  The fruit flavor comes from a 10oz. jar of all fruit spread, so you can customize it however you like!  I used apricot spread here because that is what I picked up at the store, but any flavor would work. The possibilities are endless. 

Note: This cheesecake pie is on the soft side, even after it sets up, so you will want to keep it refrigerated until it's time to slice and eat it. 



Easy Apricot Cheesecake Pie
Adapted from Allrecipes



1-9" premade graham cracker crust
8 oz. cream cheese (can use reduced fat), room temperature
1-10 oz. jar of ALL fruit spread, any flavor (I used Apricot)
1/2 tsp. vanilla extract (optional)
4 oz. Cool Whip (1/2 a container) (plus additional to garnish, if you wish)

In large bowl, combine the cream cheese and the entire jar of fruit spread with electric mixer until smooth.  
Fold in Cool Whip.  
Spread filling into the pie shell. 
Chill in refrigerator for several hours to set.  
Garnish as desired.  Keep chilled until ready to serve.

Quick, easy and yummy. I will definitely be experimenting with other flavors, maybe even combine some flavors next time and add some fresh fruit.

  4. I once created a pie like this with strawberry jelly but unfortunately didn't use an all-fruit one and it was a little fakish--like too sweet or something. I fixed the soft-set by dissolving a pack of unflavored gelatin in 1/4 cup boiling water and letting it cool a bit before adding into the filling mixture-worked like a charm! This sounds utterly delish--I never had an apricot pie of any sort!

  5. I love anything with a graham cracker crust! We don't have t.v. at my step-sons house, but we were out yesterday and saw the videos of the destruction in Oklahoma - so sad!
