Peanut Butter Toast with Berries and Honey


Yesterday I posted the recipe for a delicious savory Mediterranean Veggie Hummus Toast, but today I thought I'd share an equally delicious but sweet toast idea...Peanut Butter Toast with Berries and Honey! Oh my word you guys, this one is a keeper!

Who doesn't love peanut butter melting into warm piece of crispy toast?  

This simple recipe makes that piece of toasty heaven even better with the addition of sweet, fresh, ripe berries and honey. It's a sweet taste sensation that will have your tastebuds dancing.

This time of year, I really like to use local raw honey. It helps my family and I combat those seasonal allergies we seem to be bothered by each Spring. If you can find it, it's totally worth buying, but remember, never give honey to a child under the age of one.

The bread I used is perfect for this toast.  Pepperidge Farms® Harvest Blends Ancient Grain variety works so well with these flavors and really stands up to the weight of the toppings! Harvest Blends comes in three tasty varieties: Seeded Grain, Sprouted Grain, and Ancient Grain.  They all have a nice soft texture, but they also have a nice crunch from the addition of seeds.  They are wholesome and delicious and are available for purchase at your Great Lakes region, Midwest grocers now!

Peanut Butter Toast with Berries and Honey
Easy sweet snack, quick breakfast, or dessert that is actually good for you!

Ingredients

  • 1 slice Harvest Blends Ancient Grain Bread, toasted
  • 2 TBSP natural peanut butter (I prefer the kind with no added sugar)
  • 2 - 3 large ripe strawberries, sliced
  • 5 - 6 blueberries
  • 1 TBSP honey (local, raw is best!)

Instructions

  • Spread toasted bread with peanut butter. Arrange strawberry slices atop the peanut butter. Scatter blueberries in between strawberry slices. Drizzle with honey.
Yield: 1 serving
Prep Time: 00 hrs. 05 mins.
Cook time: 00 hrs. 00 mins.
Total time: 5 mins.
