Easy Skillet Ham Hash

If you're a fan of corned beef hash, you are going to love Ham Hash! Diced ham, potatoes, onions, and red bell peppers are sauteed until crispy and brown then topped with perfectly cooked eggs for a fabulous brunch, breakfast, lunch, or light dinner! Ham Hash makes a great leftover ham recipe too!

My family and I are huge fans of corned beef hash. In fact, in March, I usually make extra corned beef just so we can enjoy Best Corned Beef Hash with the leftovers. But, corned beef isn't always available and when it's not in season, it can be pretty pricey.

Lucky for us hash lovers, there's an alternative. It's always available ham! 

Fully cooked ham, whether you buy it as ham steaks like I did, or use leftover holiday ham makes a quick, easy, and economical hash perfect for breakfast, lunch, or dinner!

How long is leftover ham good in the fridge?



Leftover ham is generally safe to eat for 3 to 5 days in the refrigerator. This ham storage chart is a handy reference to use to make sure your leftover ham is still good to eat.

Because you have a relatively short window to eat up your leftover ham, recipes like this Ham Hash are good to have available! 


Can you freeze leftover ham?



Yes any ham except canned ham can be frozen. Again, using the handy ham storage chart, you can figure out what the proper amount of time the ham you have can be safely frozen.  

Once frozen leftover ham is defrosted, you can use it in recipes like this Ham Hash, Amish Ham Loaf, and Classic Ham and Bean Soup, and Ham and Asparagus Quiche.

How do you make Ham Hash?



If you've got leftover ham from a holiday dinner, turning it into Ham Hash is an easy way to repurpose your leftovers! But if you don't have leftover ham in your fridge, using ham steaks is a quick, easy, and economical choice. 

Ham steaks are always available and priced well. You'll find them in the grocery store by the other ham products in the meat department. 

To turn ham into ham hash, it's just a matter of dicing onions, red peppers, and of course the ham then sauteing them with some oil in a skillet with a bag of refrigerated diced potatoes. 

It's a quick and easy meal for anytime of the day or night! Because most ham is lean these days, it's also an easy healthy recipe the whole family can enjoy!

Ham Hash with Eggs


We enjoy our ham hash topped with sunny side up, runny yolk eggs. The yolk makes a nice sauce that pairs perfectly with the ham, veggies, and potatoes. 

Add a few dashes of hot sauce to spice it up, if you like! Top your ham hash with your favorite style of eggs or don't top it at all.  It's your call!

Ham Hash

Ham Hash

Ham Hash is fully cooked ham combined with potatoes, onions, and sweet red bell pepper for a tasty hash that's perfect for ham leftovers! Best when served with runny yolk eggs on top!

Ingredients

  • 2 TBSP olive oil (or oil of your choice)
  • 20 oz. package of refrigerated, precooked diced potatoes (I used Simply Potatoes brand)
  • 1 cup chopped onion
  • 1 cup chopped red bell pepper
  • 2 cups diced fully cooked smoked ham (diced to approx the same size as the potatoes)
  • salt and pepper
  • 1 TBSP finely chopped fresh rosemary (optional)
  • 12 large eggs

Instructions

  1. Heat oil in large nonstick skillet over med/high heat until starting to shimmer
  2. Add in all the potatoes, stir, then cover and cook for 5 minutes.
  3. Add in the onion and the red pepper. Stir to combine. Replace cover and continue to cook for 5 more minutes.
  4. Remove cover from pan, and add in the diced ham. Cook uncovered, stirring occasionally until the hash has a nice brown color to it, the onion and pepper are soft, and the potatoes are fork tender. Remove from heat.
  5. Toss with fresh rosemary and season with salt and pepper. Place into serving bowl and keep warm.
  6. Wipe out nonstick skillet. Place back on stove and heat to medium. Spray with cooking spray (or use any fat you like to cook eggs in) and cook eggs (you will probably need to do this in two batches, 6 at a time) to your desired amount of doneness. Season with salt and pepper and serve over warm hash. Top with a couple of shakes of hot sauce, if desired.
