White Chocolate Layer Cake with White Chocolate Frosting


If you're on the hunt for that special celebration cake that will make everyone swoon, look no further. This easy-to-make, homemade White Chocolate Cake covered in White Chocolate Buttercream Frosting makes a wonderful celebration cake! This is the perfect anniversary cake, birthday cake, holiday cake or anytime cake!

While I don't mind using boxed cake mixes...every now and again, I like to up the ante and bake a homemade cake from scratch. Don't get me wrong, boxed mixes have their place for sure. (Like in this ever popular and delicious Easy Strawberry Bundt Cake recipe.) But, there's just something about a homemade cake that a cake from a boxed mix just can't live up to.

White Chocolate Cake Recipe


I love, love, love this homemade cake recipe from scratch for White Chocolate Cake. It's a wonderful homemade cake with a moist, but slightly dense crumb. This recipe for White Chocolate Cake is so easy to put together too! Almost as easy as making a boxed cake mix! 

You don't need a stand mixer or electric mixer to make this White Chocolate Cake. The dry ingredients are simply whisked together with the wet ingredients. But here's the secret to a tender crumb...mix the batter just until it's combined. Over mixing will cause the cake to become tough and very dense...and no one likes a tough dense cake. Making sure you don't over mix this cake is the hardest part of making it, I promise!

This White Chocolate Cake is versatile too. It can be made into a two layer cake, like shown, or it can be made in a 9 x 13 inch sheet pan or into 24 cupcakes. (See the recipe card below for baking instructions.)

White Chocolate Frosting


What's an incredible homemade cake from scratch without an incredible frosting to top it with? This White Chocolate Frosting is a nice and fluffy buttercream frosting with a delicate white chocolate flavor that compliments the White Chocolate Cake perfectly. 

Make sure your melted white chocolate is cooled enough not to melt the butter when adding it to this White Chocolate Frosting recipe. Feel free to adjust the confectioners sugar and heavy cream amounts to produce a frosting with the texture you like. I prefer my frostings to be a little on the loose side if I'm not piping them.

The Perfect Anniversary Cake


In a few months, my hubby and I will be celebrating our 28 year anniversary. While it's not a milestone number, it certainly is an accomplishment. We've weathered through some very tough times in our relationship and this White Chocolate Cake with White Chocolate Frosting would be the perfect way to celebrate our anniversary this year. 

It really makes a lovely celebration cake!

White Chocolate Cake is a homemade, from scratch, vanilla cake with a gentle taste of white chocolate and a moist, slightly dense crumb. Covered in a luxurious white chocolate buttercream frosting makes this cake a wonderful special occasion cake!

Ingredients

For the White Chocolate Cake
  • 2 1/2 cups all purpose flour
  • 1 1/2 cups granulated sugar
  • 3/4 tsp. baking powder
  • 3/4 tsp. baking soda
  • 1 tsp. salt (not kosher)
  • 1 cup buttermilk
  • 1 cup canola or vegetable oil
  • 1/2 cup water
  • 1 tsp. pure vanilla extract
  • 4 large eggs, room temperature
  • 5 oz. quality white chocolate (I used Ghiradelli) melted and slightly cooled
  • 1/4 cup White chocolate chips, for garnish (optional)
For the White Chocolate Buttercream Frosting
  • 1/2 cup unsalted butter, at room temperature
  • 5 oz. quality white chocolate (I used Ghiradelli ) melted and cooled
  • 1/4 tsp. salt
  • 3 - 3 1/2 cups confectioners sugar, sifted
  • 1/4 cup heavy cream

Instructions

For the White Chocolate Cake
  1. Preheat oven to 350 degrees F. Coat two 9 inch layer cake pans with baking a baking spray, such as Baker's Joy. Set aside.
  2. In large bowl, combine the flour, sugar, baking powder, baking soda, and salt with a whisk. Set aside.
  3. In medium bowl or large glass measuring cup, combine the buttermilk, oil, water, vanilla, and the eggs. Whisk to combine.
  4. Pour the wet ingredients into the bowl with the dry ingredients. Gently whisk together JUST UNTIL THE MIXTURE IS COMBINED. Do not over mix! (overmixing will make your homemade cakes less tender) Gently fold in the melted white chocolate.
  5. Divide batter evenly between the two prepared cake pans. Place in oven and bake for 25 to 35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  6. Cool, in pans, on a rack for 15 minutes, then cool completely on racks.
  7. Frost with White Chocolate Buttercream Frosting (directions below)
For the White Chocolate Buttercream Frosting
  1. In a stand mixer with the paddle attached (or with an electric mixer) beat the butter, the cooled, melted white chocolate, and salt until well combined. (About 4 minutes)
  2. Start with adding in 3 cups of confectioners sugar, 1 cup at a time, beating well after each addition.
  3. Add in the heavy cream, and beat until frosting is light and fluffy. If it seems too loose, add more confectioners sugar. If it seems too stiff, add more cream until you get to your desired consistency.
  4. Frost cooled white chocolate cake. Garnish with white chocolate chips, if desired.

Notes

This cake can be made using other pans. Bake times are as follows:

13 x 9 inch pan - 20 to 30 minutes24 cupcakes - 15 to 20 minutes
