For as long as I can remember, I've had a love affair with oatmeal. I know it's not for everyone, but if you are an oatmeal lover like me, you know what I am talking about. 

Whether I'm having them as a hearty bowl of cooked oats for breakfast, cooked as egg topped savory oats, in homemade granola, or in a dessert like easy oatmeal banana bread or cookies I can't seem to get enough of them. 

This oatmeal cookie recipe is one of a kind and has quickly become a favorite cookie recipe! Chewy oats combined with Raisin Bran cereal and crunchy walnuts make the most amazing cookies. The interesting  texture of the cookie will please your palate. They are really delicious cookies!

Breakfast for dessert

I rarely eat processed breakfast cereal these days, but when I was a kid, it was a mainstay of our family. As a single parent of three hungry kids, cereal helped my mom stretch the food budget. 

Though I don't eat it now, I do appreciate the nostalgia it brings. These days I consider cereal more of a dessert choice to satisfy my sweet tooth. This is why adding cereal to dessert makes so much sense to me. 

Everyone loves gooey Rice Krispie treats made with marshmallows, butter, and crispy rice cereal, so why not add raisin bran to oatmeal cookies for a bit of extra pizzaz?  

How to chose the right oats and cereal for Raisin Bran Cookies

Choosing what oatmeal to use:

Not all oatmeal is created equal. For this recipe you need to know what kind of oatmeal to use. You can find oatmeal available in the stores in the following varieties: Instant Oats, Quick Cooking Oats, Old-Fashioned Oats, and Steel Cut Oats. 

For this recipe (and most other oatmeal cookie recipes) you can use either Quick Cooking oats or Old-Fashioned Oats. DO NOT use Instant or steel cut oats for this recipe. For this recipe I prefer Old-Fashioned Oats because you will get chewier cookies. 

Choosing what brand of Raisin Bran cereal to use:

Any brand of raisin bran cereal will work for this recipe. You can even go all out and use Raisin Bran Crunch cereal for this recipe for a little extra crunch to your cookies! 

Now that you've decided what kind of oats and raisin bran cereal you will use, let's get baking this simple drop cookie recipe!

Variations and Substitutions

  • Not a fan of raisins? Substitute the raisin bran cereal with a plain wheat or oat bran flake cereal. 
  • Substitute the chopped walnuts for chopped pecans or almonds. Or, you can simply leave nuts out. 
  • Mix in 1/2 cup semi-sweet chocolate chips to the batter along with the oats, cereal, coconut and oats for a chocolate covered raisin vibe. 
  • Add 1/4 cup of dried raisins or sweetened dried cranberries for a more dried fruit forward cookie. 

Tips for the best Raisin Bran Cookies

  • Measure the flour by using the easy dipping method of dipping your measuring cup into the flour and leveling off with a knife. 
  • Preheat your oven as directed in recipe card to the correct temperature.
  • Use parchment paper lined baking sheets for an easy release of baked cookies from pan.
  • Allow cookies to cool on baking sheet for a few minutes before attempting to remove them to the wire rack to completely cool. (This keeps them from falling apart).
  • Make sure to store cooked and cooled cookies in an air-tight container to retain their texture and freshness.
  • Any brand of raisin bran cereal will work in this recipe. It does not have to be a big name brand. Store brands work fine!

Chewy Raisin Bran Oatmeal Cookies Recipe

Chewy Raisin Bran Oatmeal Cookies are packed with Raisin Bran cereal and walnuts for crunch and oats, raisins and sweetened coconut flakes for chew making them a step up from your ordinary oatmeal cookies!

Ingredients

  • 2 cups Raisin Bran cereal
  • 1/2 cup unsalted butter, softened to room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 teaspoon pure vanilla extract
  • 1 large egg
  • 1 cup all purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup sweetened, flaked coconut
  • 1/2 cup old-fashioned oats
  • 1/4 cup chopped walnuts

Instructions

  1. Preheat oven to 350 degrees F. Line baking sheet(s) with parchment paper or spray with vegetable spray. (I suggest using parchment paper for best results)
  2. Put raisin bran cereal into a gallon sized plastic zipper bag and close. Crush cereal slightly with hands. Set aside.
  3. Combine softened butter, granulated sugar, and brown sugar in stand mixer or large bowl with an electric mixer and mix until light and fluffy. (About 5 minutes)
  4. Add in pure vanilla extract and egg. Mix until well combined.
  5. In a medium bowl, whisk together flour, baking soda, baking powder, and ground cinnamon.
  6. On low speed, add dry ingredients slowly into the butter mixture until well combined.
  7. Stir in sweetened flaked coconut, old-fashioned oats. crushed raisin bran cereal , and chopped walnuts by hand until well combined.
  8. Using small cookie scoop or a Tablespoon spoon form into 2" balls, and put on parchment lined baking sheet about 2" apart.
  9. Bake for 10-12 minutes and golden brown. Allow to cool for 2-3 minutes on baking sheet before removing them with a spatula to a cooking rack.
  10. 10. Once cooled, store in airtight container to keep fresh and chewy.

Notes

This recipe yields about 2 1/2 dozen cookies. It can easily be doubled to make a bigger batch of 4 dozen cookies.
