Creamy Cauliflower Soup

I have mentioned before how much I adore Gina's blog, Skinnytaste, and how wonderful her recipes are.  Here is one of her recipes I have made a few times since discovering it.  Today, I changed the recipe a bit  and added a few carrots to the original version. I was very pleased with the result.  Even if you aren't a fan of cauliflower, you will enjoy this creamy soup.

Ingredients:
1 TBS unsalted butter
1/2 cup chopped onion
2 -3 carrots, peeled and sliced thin
1 tsp. all purpose flour
1 head of fresh cauliflower florets, cut into pieces
4 cups of fat free chicken stock
salt and pepper
1/4 cup fat free half and half
paprika to garnish

Directions:
  1. Heat heavy stock pan or dutch oven over medium heat.
  2. Add butter, onion and carrot.  Cook until onion and carrot begin to soften.  ( about 3-4 min) Add flour and cook while stirring for one minute.  Add chicken broth and cauliflower florets.
  3. Bring to boil, cover and turn heat down and allow soup to simmer until all vegetables are soft enough to break up with a spoon.  ( approx 20 minutes).
  4. Take off heat, and puree with a hand blender ( immersion blender).  If you do not have a hand blender you can take the soup out in small batches and puree in food processor or blender, but be careful to only puree one cup at a time, because this is HOT liquid.
  5. Once the soup is pureed to your liking, stir in the fat free half and half, and season with salt and pepper to taste.
  6. Ladle into bowls and garnish with paprika.

I LOVE my hand blender.  I picked one up a few years ago from Bed, Bath and Beyond for around $20.  They make easy work of pureeing hot soups!  If you don't have one, consider getting one!

  1. Thanks for your comment on my blog! I appreciate it!

Gina's blog is wonderful - try her pumpkin butter if you haven't, YUM! And the lattes are wonderful, too! I saw the cauliflower soup but I wasn't sure...I'll have to try it now. I have an immersion blender and I've never used it. What a great excuse to break it out of the box!

    Have a great weekend :)
