The BEST Protein Pancakes

Hands down, the BEST protein pancake recipe I have tried yet.  I have tried many...but this one tops the list.

Why?

The texture is incredible.....you cannot tell there isn't any flour in it.  The taste is outstanding....real comfort food.   They keep you full for hours because of all the protein from the cottage cheese!  It's easy to put together ( I used a mini food processor to whip it up) too!  And, although I don't follow a gluten free diet, and really don't know much about it, it would seem to me that these pancakes would also work well with that! ( please, let me know if I am wrong)

This recipe has been making some serious food blog rounds....I first saw it on Preventionrd, who saw it on Loser for Life, who grabbed it from Meals & Moves ( credit given to all, of course!)  Yesterday, Biz posted her version on My Bizzy Kitchen...and I am certain, if you scope out the blogsphere, you will find many more!!!  The only thing I changed in the original recipe is that I used fat free cottage cheese instead of low fat because that is what I had on hand.  I also added just a bit of water to loosen up the batter.  You might want to add the water and you might not, but I like thinner pancakes. This recipe makes four  6" pancakes or three bigger ones.  It can easily be adapted to make more than one serving.

Servings - 1   Serving size - four 6" pancakes or 3 bigger ones   Points Plus per svg - 7 points+
Calories - 280,   Total Fat - 3g,   Carb. - 32.8g,   Protein - 30g,   Fiber - 4g

1/2 cup Old Fashioned Oats
1/2 cup fat free cottage cheese
1/2 cup egg beaters
1/2 tsp. pure vanilla extract
1/2 tsp. baking powder
1/2 tsp. cinnamon
dash of salt
water ( optional )

1.  Combine all ingredients in blender or food processor ( I think next time I will use my magic bullet!) and process until smooth and combined.  About 30 seconds to 1 minutes.  If batter seems too thick to you, add a bit of water to loosen. Allow to stand for 5 minutes. 

2.  Heat med nonstick skillet that has been sprayed with cooking spray on med-high heat.  Add batter, about a 1/4 cup at at time ( for the smaller cakes, a bit more for bigger cakes) and spread evenly with a spoon.  When bubbles form on top and the edges start to get dry, flip and cook other side.  Repeat with the rest of batter.  


I love pancakes and waffles.  Sometimes I crave them and want them for dinner!  Although I like the cakes themselves, I am not really a huge fan of having them drip with syrup.  I only like a drizzle, but I do like to have them with whipped butter and fruit.  Are you a pancake/waffle lover?  How do you like to eat your cakes?

  1. The look totally perfect! My husband is always looking for more protein (as am I now due to the baby!)- but hes not a cottage cheese fan. Can you taste or tell there is cottage cheese in them?? I love both pancakes and waffles. I like them topped with just fruit or a little syrup

  2. @ Erica...no, you cannot taste nor tell by the texture the cottage cheese is in there..but I like cottage cheese. Try it...maybe he won't notice!

  6. I'm so glad you liked them, too! I think I am going to have to try Biz's lemon/blueberry twist...sounds delicious! My batter was a bit thick, I think your idea to add a bit of water is spot-on...I will definitely do that next time. I don't have time tomorrow, but Thursday...protein pancakes!! :)

  9. My hubs is SUCH a pancake fan and is always looking for ways to get extra protein in his diet...I will have to give these a try! Our favorite pancakes are banana - just love the flavor it gives! Maybe I could add some sliced bananas in this! Oh, and as for the granola recipe - this stuff was the most crunchy granola I've made, which is fantastic! I love when granola keeps its crunchiness even after several days, like this one! I think sometimes people get worried that taking out the oil will actually take away from the crunch factor, but I did not have that problem at all with this one!

    @ Mandi...I actually went ahead and made the granola yesterday and we all LOVED it! I used the applesauce like you did too! I haven't figured out the stats yet, but I am guessing it has got to be better than it would have been with the oil and it's very CRUNCHY! Hopefully I will post the recipe sometime next week!   24. I made these for the first time last week. I had been looking for a high protein breakfast and was getting tired of eggs and shakes. Although the picture looked great, I was not expecting much in the taste department. How could oatmeal, egg whites and cottage cheese taste like pancakes?

    Boy was I surprised. They taste better than the real thing- taste more like french toast. Since last week I have made these twice for my family and they love them too. They couldn't believe what they were made out of when I told them. My daughter wants me to make them each morning.

    I have made up a triple recipe of batter and keep it in a shaker bottle in the fridge. This way anyone in the family who wants healthy pancakes for breakfast can have them in no time.
