Babybel® Mozzarella Mini Caprese Skewers

I've blogged about the yumminess of The Laughing Cow's Mini Babybel® Mozzarella Style reduced fat semi-soft cheese before. And I am once again, shouting out how wonderful I think this product is.



There is a good reason why too!

I LOVE THEM!!  I'll be honest, my favorite way to eat them is straight up. Unwrap the plastic paper, pull the string on the wax coating, and just bite down.  There is a whole lot of deliciousness in that little package...not to mention, they are 100% natural, provide 6g of protein, have only 3.5g of fat, and are a great source of calcium.


So when I was contacted by a representative of the company and asked to try the Mozzarella style ones again, of course I jumped at the opportunity!  (Disclaimer: Mini Babybel® Cheese provided me with product for this review. Although I love eating them straight up, I wanted to find a kicked up way to enjoy these treats too!
That's how the Babybel® Mozzarella Mini Caprese Skewers were born.


Just like eating a Caprese salad, but in a perfectly portable way...just like Mini Babybel® was meant to be eaten!  These are super easy to assemble and really make a great presentation with all the beautiful colors.   Enjoy them as a great snack or serve them as an appetizer.  Either way, they are sure to please!




Babybel® Mozzarella Mini Caprese Skewers

Yields 4 skewers


Ingredients:
4- 6" wooden skewers
2  individual Babybel® Mozzarella style cheese discs, unwrapped and removed from the wax coating
8 grape tomatoes
8 fresh basil leaves, whole
extra virgin olive oil
good balsamic vinegar

Directions:
  1. Cut both cheeses into 4 equal pieces, so that you end up with 8 small pieces of cheese
  2. Assemble the skewers by threading one grape tomato onto the skewer, followed by 1 basil leave which has been folded into thirds, then a piece of cut cheese and repeat.  
  3. Repeat process for each skewer.  
  4. Drizzle the skewers with extra virgin olive oil and some balsamic vinegar.
Note:  How do you know if you have a good balsamic vinegar?  A good balsamic will be thick and nicely flavored.  If your balsamic is thin, you can make a reduction by following THESE directions then drizzle onto the skewers.

This quick recipe is so great!  And the skewers really do taste just like a caprese salad, only you don't need a fork to eat them!  You can adjust the ingredients to make as many skewers that you like.  I'm not supplying the nutritional information on these, because it's hard to gauge exactly how much oil you will end up eating since it's drizzled on...but rest assured, these are quite low calorie.
