Easy Christmas Cow Pies

I love giving homemade gifts from my kitchen this time of the year and Christmas Cow Pies (aka cow pie candy) are a festive and super simple candy treats anyone can make!  Creamy milk chocolate, almonds and dried cranberries come together in this sweet holiday treat!

I LOVE easy to make easy Christmas candies! Easy Pumpkin Spice Pecan Fudge is always a hit and these Homemade Maple Walnut Candies disappear quickly whenever I make them!

Making Cow Pies is not only easy, but fun too!  The fruit, nut, and chocolate combination is irresistable. Milk chocolate is melted in the microwave, almonds and dried cranberries are added, then the candies are dropped onto waxed paper or parchment, and chilled until set.  Top them with festive sprinkles or leave them plain...it's your choice!

These make a great homemade holiday treat for eating or for gift giving.  To give as gifts, dress them up in some clear cellophane bags tied with a colorful ribbon.

These yummy fruit and nut clusters can be made like I did here, with almonds and dried cranberries, or you can use peanuts and raisins if you like.  It's a super simple, super delicious treat I like to make
 every year!  The hardest part is trying to keep your husband from eating them all before you have a chance to give them out!

Tips to melt chocolate in the microwave:

  • Go slow!  All microwaves are not created equal. Some heat faster than others. Start off melting the chocolate on HIGH and for only 1 minute.  Then let it sit for a minute and stir. If not completely melted, return to microwave and heat in 20-30 sec intervals and stir again, until it is. 
  • DO NOT allow any water to come in contact with your chocolate. This will cause your chocolate to seize and get thick. You will need to start over if this happens. You can't bring the chocolate back from this stage.
  • DO NOT overheat. This will also cause your chocolate to seize up and get thick. 
  • Make sure you buy a good melting chocolate. Chocolate candy melts, such as the kind Ghirardelli makes, work well in this recipe.

ingredients:

  • 2 cups milk chocolate chips
  • 2 tsp. coconut oil
  • 1/2 cup dried cranberries or raisins
  • 1/2 cup slivered almonds or peanuts

instructions:

How to cook Christmas Cow Pies

  1. In a microwavable safe bowl, melt the chocolate chips and coconut oil starting on HIGH for 1 minute, then stirring and, if needed, heating on HIGH in increments of 30 seconds until melted. (microwaves work differently, so watch so the chocolate doesn't get too hot)
  2. Mix in dried cranberries and the almonds. Drop onto waxed paper lined baking sheet by tablespoon. Chill until set.
