Oatmeal Raisin cookies still stand out as one of my favorite kinds of cookies of all time. I don't know if it's the chewy texture that pulls me in or the fact that I pretend they might be healthy for me with all that "good for you" oatmeal! The spices in this cookie really take it up to a new level. They are buttery, chewy, and spicy!

I used two types of oats in this cookie to get just the right texture: A combination of old fashioned oats and quick oats. I also used golden raisins, because I like them so much better than the dark ones. But regular raisins work fine in this recipe too! Not a fan of raisins? Feel free to leave them out.
Make sure you don't overbake these cookies so you get a nice, chewy texture!

Spiced Oatmeal Raisin Cookies

Soft, chewy spiced oatmeal raisin cookies packed with cinnamon, ginger, nutmeg, cloves, and golden raisins. The ultimate cozy holiday cookie recipe!
Ingredients
- ½ cup unsalted butter softened
- ½ cup butter-flavored vegetable shortening
- ½ cup granulated sugar
- 1 cup light brown sugar packed
- 2 large eggs at room temperature
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- ½ teaspoon ground ginger
- ¼ teaspoon ground cloves
- ¼ teaspoon ground nutmeg
- ½ teaspoon salt
- 2 cups old fashioned oats
- 1 cup quick oats
- 1 cup raisins (I like golden but regular work fine too!)
Instructions
- Preheat oven to 350 degrees F. Line two baking sheets with parchment paper or silicone baking mats.
- In a large bowl or bowl of stand mixer, beat the butter, butter-flavored shortening, brown sugar, and granulated sugar with a hand mixer or stand mixer until combined. Add the eggs and vanilla, and beat until light and fluffy about 3 - 5 minutes.
- In a medium mixing bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, nutmeg, and salt.
- Add the dry ingredients to the wet ingredients and beat until well combined. With mixer on low, slowly add in the oats and raisins until just combined.
- Drop about 1 tablespoon of cookie dough with a cookie scoop or measuring spoon and place it on the prepared baking sheet. Repeat with the remaining cookie dough, placing the scoops about 2 inches apart. I like to bake my cookies one pan at a time. Once the first pan is done and cooling, bake off the second pan.
- Bake for 10 to 12 minutes, or until edges are golden brown. Do not overbake.
- Remove from oven and allow to cool for 1 to 2 minutes on the baking sheet so cookies set. Transfer to a wire rack to cool completely. Store in an airtight container once cooled.
