Greek Style Zucchini Ribbon Salad

Have you purchased a spiralizer yet?  If you have, dig it out and make Greek Style Zucchini Ribbon Salad today!  This quick and easy, summer salad makes the perfect accompaniment to just about any protein you can think to pair it with! Fresh summer zucchini, dill, mint and feta cheese all come together with a zesty lemon dressing for a great summer salad everyone will love.

It's time for the August edition of The Secret Recipe Club.  This month I was assigned to the blog, Well Dined.  A few months ago, Sarah the author of Well Dined, was assigned my blog to review for Secret Recipe Club. Naturally,  I was happy to have the chance to dig through her recipes this month. I love her food philosophy of keeping things seasonal and "relatively" healthy.  Because, yes, there is always room for a little indulgence in life as long as you try to keep things real most of the time!  

As I started to browse her recipe titles, I realized choosing a recipe was going to be no small task.  I bookmarked so many recipes to try, I will be cooking from her blog for the next year!  haha  Sarah has a plethora of good for you, good tasting recipes to choose from.  I ultimately decided to make her Greek Style Zucchini Salad because local zucchini are abundant and reasonably priced at the market right now!  And, I was itching to try out my new spiralizer!

Sarah shredded the zucchini for this recipe, but I thought it would be fun to put a spin on it with zucchini ribbons I made with my spiralizer.  It was so easy!  I thought the ribbons worked out perfectly for this salad! If you don't have a spiralizer, no worries, you can still pull off this salad flawlessly by shredding the zucchini like Sarah did. 

The lemon vinaigrette the salad is dressed with plays so beautifully with the flavors of the dill and mint, and the zucchini is hearty enough to stand up to the dressing. 

This salad is an absolute keeper and one that is just right for this time of year, when everyone's gardens are becoming full of fresh zucchini.  Thanks Sarah for this great recipe!  I know I will be back to your blog again and again for fresh and healthy recipe ideas! 


Greek Style Zucchini Ribbon Salad

Greek Style Zucchini Ribbon Salad
Quick, healthy salad made with summer fresh zucchini, mint, dill, and feta tossed in a lemon vinaigrette.

Ingredients

  • 1 lemon, zested and juiced
  • 2 TBS olive oil
  • 1 tsp. honey
  • 2 cloves garlic, smashed and then minced
  • salt and pepper, to taste
  • 1 pound zucchini, cut into ribbons on a Spiralizer
  • 2 TBS fresh mint, chopped
  • 2 TBS fresh dill, minced
  • 2 green onions, sliced
  • 1/2 cup feta cheese, crumbled

Instructions

  1. In a large bowl, whisk together lemon juice, lemon zest, olive oil, honey, garlic and salt and pepper.
  2. Add in zucchini ribbons, mint, dill, green onions and feta cheese. Toss gently to coat with dressing.
  3. Chill for about 30 minutes to allow flavors to blend. Toss again before serving.
Yield: 4 servings
Prep Time: 00 hrs. 10 mins.
Cook time: 00 hrs. 30 mins.
Total time: 40 mins.
