Peanut Butter White Chocolate Chip Cookies

It's one of my favorite times of the year.  Not because of the holidays...but because of a reason to do what I love to do best!  BAKE COOKIES!

My family does have their favorites, but each year I try to create a new twist on a classic or come up with a new flavored cookie. This year, it's these Peanut Butter White Chocolate Chip Cookies. Have you tasted the new white chocolate Reese's Peanut Butter cups yet? So good. These cookies are inspired by that candy. They are rich peanut butter cookies generously stuffed with lots of white chocolate morsels and sprinkled with a bit of salt to off set all the sweetness. They are divine!

Tips for Making the Very Best Cookies!

  • Line baking sheets with parchment or use a silpat for easy lift and cleanup!
  • Preheat your oven to the required temperature...and once you put the cookies in the oven, watch them carefully.  All ovens are different and cookies can bake at a wide range of times depending on your oven.
  • Use a cookie scoop for perfectly portioned, all the same size, cookies
  • Don't over bake cookies! They'll turn out dry and hard. 
  • Let your cookies rest on the baking sheet for at least 2 - 3 minutes before removing them to a cooling rack. This will ensure your cookie doesn't fall apart when you move them.

Peanut Butter White Chocolate Chip Cookies

Peanut Butter White Chocolate Chip Cookies
Peanut Butter White Chocolate Chip Cookies are rich peanut butter cookies generously stuffed with lots of white chocolate morsels and sprinkled with a bit of salt to off set all the sweetness.

Ingredients

  • 1/2 cup unsalted butter, at room temperature
  • 1/3 cup crunchy or smooth peanut butter
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tsp. pure vanilla extract
  • 1 1/4 cup all purpose flour
  • 1/2 tsp. kosher salt
  • 1/2 tsp. baking soda
  • 1 1/2 cups white chocolate chips
  • coarse salt for dusting, if desired

Instructions

  1. Preheat oven to 350 degrees F. Line baking sheets with parchment or use a silpat.
  2. In large bowl, with an electric mixer, beat butter, sugar, and peanut butter until creamy. Add in egg and vanilla, beat well.
  3. Stir together the flour, salt and the baking soda in a small bowl. Add to the wet mixture beating well.
  4. With a spoon, stir in the chips. Drop onto prepared baking sheets with a cookie scoop, about 2" apart. Sprinkle tops with salt, if desired.
  5. Bake 10 to 12 minutes or until lightly browned and set. Allow to rest on baking sheet once done for 2 to 3 minutes, then remove to cooling rack and cool completely.
Yield: 36 servings

Cook time: 00 hrs. 12 mins.
Total time: 22 mins.

You suggested I make a rolled red and green sugar Christmas cookie and you were right! I made the recipe and took it to a open house and those cookies were the hit of the night. Not only did they look super festive but the taste was wonderful. Everyone wanted your recipe so I told them about your blog.   2. I remembered my Mom used to bake Peanut Butter cookies when we were kids so I decided to add YOURS to my Bake and Gift list for my children and grandkids. This particular Christmas is a bit of a sad one for me. I lost my Dad this past October and my Mom passed away almost 3 years earlier to the day. To put some of the JOY back into the Season, my baking was almost exclusively about my memories growing up. It was very therapeutic! This cookie recipe was the winner of my attempts to copycat some of those memories with the white chocolate chips being something new for MY family to remember me by. So delicious that I had to make a half batch just for ME!!! Thanks so much for the great recipe and OLD + NEW memories that are being made in our lives this Christmas Season.
