I find this time of year one of the busiest! Between yard work, Spring cleaning, kids' activities, school, and all the things that need to get done, it can be a challenge to get a tasty dinner on the table quickly. I almost always turn to quick pasta dishes like this one to help me feed my family when I haven't had time to plan out a meal.

You know the drill. It goes something like this...

Open the fridge. Close the fridge.

Open the freezer. Close the freezer.

Open the pantry. Close the pantry.

Chicken Bacon Pasta is the answer to your dinner dilemma! It's full of tender white meat chicken, crisp bacon, fresh mushrooms (or canned), frozen peas (optional), and pasta in a quick and easy creamy wine sauce. This recipe for Chicken Bacon Pasta is one of my "go to" meals.

What makes Chicken Bacon Pasta an easy weeknight meal?

  • The chicken breast used in this recipe can be leftover from another meal, rotisserie, or frozen grilled and ready thawed.
  • The bacon in Chicken Bacon Pasta can be fresh or leftover crumbled bacon from your weekend breakfast! I often do large batch bacon baking in my oven on the weekends, so I have bacon all week long for breakfasts, lunches and to use in recipes such as this Chicken Bacon Pasta.
  • You can substitute canned mushrooms for fresh if you don't have any fresh on hand.
  • The sauce is made by adding white wine to your favorite jarred Alfredo sauce. You can substitute chicken stock in place of the white wine. 
  • Use any pasta shape you prefer when you make Chicken Bacon Pasta.

Although the creamy sauce and the chicken are great ingredients in this Chicken Bacon Pastsa, the real star of this recipe is bacon! The salty, crispy goodness of bacon dotted throughout adds special something to any meal. Bacon has a way of making just about anything it's added to better! Chicken Bacon Pasta
Chicken Bacon Pasta is a quick and easy dinner solution made with cavatappi pasta, chicken breast, crisp bacon, and mushrooms in a creamy wine sauce.

Ingredients

  • 8 oz. cavatappi pasta (or pasts shape of your choice) cooked according to package directions and drained
  • 6 slices thick bacon, diced
  • 1 cup cooked diced chicken breast (leftover, rotisserie, or grilled and ready frozen chicken  thawed)
  • 10 oz. sliced mushrooms
  • 1 - 2 cloves garlic, minced
  • 1/2 cup white wine or chicken stock
  • 12 oz. jar of prepared light Alfredo sauce
  • 1 cup frozen peas (optional)
  • fresh ground black pepper, to taste
  • fresh parsley, minced, if desired

Instructions

  1. In large skillet, cook diced bacon until crisp. Remove from skillet and drain on paper towel. Set aside.
  2. Remove all but 1 TBS of bacon drippings from pan. Add mushrooms and cook over med heat until soft. (about 5 - 6 minutes) Add in garlic and cook another minute or until fragrant. Remove mushrooms and garlic and set aside. Wipe out pan.
  3. Return skillet to burner, and on med heat, add wine OR chicken stock. Bring to boil and turn down to simmer. Cook until mixture has reduced by half. Stir in jar of prepared Alfredo sauce and frozen peas (if using).
  4. Stir in cooked chicken, pasta, and mushroom garlic mixture. Heat through. Add black pepper and parsley.
  5. Serve immediately.
Yield: 6 servings
Prep Time: 00 hrs. 10 mins.
Cook time: 00 hrs. 20 mins.
Total time: 30 mins.
