Shaved Brussels Sprouts Salad with Apples and Ginger

Shaved Brussels Sprouts Salad with Apples and Ginger is a delicious way to enjoy raw Brussels Sprouts. 

Brussels Sprouts are thinly sliced and tossed with sweet, crisp apple slices then coated in a delightfully tangy ginger vinaigrette for a salad that pairs perfectly with just about anything. Give it extra pizzaz by adding dried cranberries and feta cheese to it too!

We love Brussels Sprouts in my family and I'm always on the lookout for a new way to serve them.  They are low in calories and high in fiber and vitamins, particularly vitamin C

They are easily found year round, but tend to be at their peak this time of year. You can purchase them on the stalk in some stores, but mostly, you'll find them picked off as individual sprouts and packaged that way or loose in a bin. 

Brussels Sprouts always find a place at our Thanksgiving table. Last year, I made Sauteed Brussels Sprouts with Bacon. It was a hit and I didn't have to use my precious oven to make them either! 

But this year, I thought I'd try something different. This Brussels Sprouts Salad will be making an appearance on our table this year.

Pictured above, I served this salad with simple Pan Fried Chicken Breasts. It made the most delicious easy, healthy side dish. But this salad is so versatile, it pairs with most proteins beautifully.

The tangy ginger vinaigrette is easy to put together. I like to put everything into a mason jar and just shake it up. 

Depending on how much dressing you like on your salads, you may not use the entire amount you make for this salad. That's ok...it can be stored, covered, in your refrigerator for a few weeks and used on other salads too.

Can I use a food processor to slice Brussels Sprouts for this salad?

Yes! You can absolutely use a food processor to thinly slice the Brussels Sprouts for this salad. However, using a good sharp knife is also fairly easy too. 

Can I make this Brussels Sprouts Salad ahead of time?

Yes, you can make this salad ahead of time. I don't suggest overnight preparation, but a few hours before you want to serve it is fine. Toss the salad with the dressing right before serving. Since Brussels Sprouts are from the cabbage family, they won't get very wilty when the dressing is added, but to retain their crunch, add the dressing as close to serving as possible.

  • Fresh Brussels Sprouts
  • Crisp, sweet apple (I like Honeycrisp)
  • Extra Virgin Olive Oil 
  • Apple Cider Vinegar
  • Dijon Mustard
  • Fresh Ginger
  • Honey
  • (optional) Crumbled Feta cheese, dried cranberries

Shaved Brussels Sprouts Salad with Apples and Ginger

Fresh Brussels Sprouts are thinnly sliced and tossed with slices of sweet apple then covered in a tangy ginger vinaigrette.

Ingredients

For the Ginger Vinaigrette
  • 1/3 cup extra virgin olive oil
  • 1/3 cup apple cider vinegar
  • 2 tsp. Dijon mustard
  • 1/2 to 1 TBSP.  grated fresh ginger
  • 2 -3 tsp.  honey
  • pinch of  kosher salt
For the Shaved Brussels Sprouts Salad
  • 5 to 6 cups thinly sliced fresh Brussels Sprouts
  • 1 medium sized fresh apple (I like honeycrisp in this salad), cored, and thinly sliced
  • salt and pepper

Instructions

  1. Whisk together all ingredients for vinaigrette. 
  2. Combine shaved Brussels Sprouts and sliced apples in large bowl. 
  3. Pour as much vinaigrette as you like on salad. Toss to coat. Season to taste, with salt and pepper. 

Notes:

This salad is also great with the addition of dried cranberries and feta cheese. Toss 1/3 cup of each in with the apples and shaved Brussels Sprouts. This will alter nutrition information.
