Zucchini Appetizer

Zucchini Appetizer is savory squares made of zucchini, onion, cheese, and spices in a crustless quiche like base that make excellent appetizers, healthy snacks, and even a quick breakfast. Serve at room temperature for best flavor!

What to do with zucchini?


It's that time of the year again, when you ask yourself, "What am I going to do with all this zucchini?"

Whether you grow it yourself, or have lovely neighbors, friends, or family that share their bounty with you, you'll need great zucchini recipes to use it in. 

When it comes to zucchini, I like both sweet zucchini recipes like this popular recipe for Chocolate Chip Zucchini Muffins  and savory zucchini recipes like this Amish recipe for Zucchini Casserole

Zucchini squash is a mild flavored vegetable that pairs nicely with tomatoes in Italian flavored dishes. It can even stand in for pasta in dishes like Greek Zucchini Ribbon Salad and makes a great side dish, snack or appetizer like these Zucchini Carrot Fritters.

Because it's such a versatile vegetable, zucchini is one of my favorite ingredients to work with.

Zucchini Appetizer Recipe 


This recipe for Zucchini Appetizer is an old one. I've been making this recipe for over 20 years now and it's still one of my very favorite ways to enjoy garden fresh zucchini.

This zucchini appetizer consists of zucchini, sweet onion, seasonings, eggs, cheese, oil, and Bisquick Pancake and Baking Mix and is baked until golden brown. The combination of Bisquck and eggs, makes the squares sort of quiche like with a very delicate flavor.

I have to confess, I've never been a huge fan of Bisquick. I've made this recipe both with Bisquick and without Bisquick, and I have to say, I like the Bisquick version better. That's not to say that you can't make this recipe without Bisquick, because you can. I've provided a substitute in the NOTES section of the recipe card. I'm just saying I like how it comes out better with the Bisquick. Not sure why.

I also switch back and forth (depending on what I have on hand) between using dried oregano and dried marjoram in this recipe. Marjoram is a milder cousin to oregano, with similar flavor profiles. If you aren't a fan of oregano, give marjoram a try.

These zucchini bites bake up nice and light. They make a lovely first course paired with your favorite glass of wine. They also make a wonderful healthy snack, that's light on calories. I've even been known to eat one or two squares for a quick, grab and go breakfast!

Zucchini Appetizer

Savory squares made of zucchini, onion, cheese, and spices in a crustless quiche like base that make excellent appetizers, healthy snacks, and even a quick breakfast. Serve at room temperature for best flavor!

Ingredients:

  • 4 large eggs
  • 1 cup *Bisquick Pancake and Baking Mix 
  • 1/2 cup finely chopped onion
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded cheddar cheese
  • 1 TBS dried parsley
  • 1/2 tsp. kosher salt
  • 1/2 tsp. seasoned salt
  • 1/2 tsp. dried oregano or marjoram 
  • dash of fresh ground black pepper
  • 1/2 tsp. garlic powder
  • 1/2 cup olive or vegetable oil
  • 3 cups thinly sliced zucchini (about 1 1/2 medium sized zucchini)
  • 7 cherry tomatoes, quartered for garnish, if desired

Instructions:

  1. Heat oven to 350 degrees F.  Spray a 9 x 13 inch baking dish liberally with cooking spray.  Set aside.
  2. In a large bowl, whisk the eggs to slightly beat. Mix in all the ingredients except zucchini. 
  3. Fold in zucchini slices. 
  4. Spread in prepared pan. Bake about 25 minutes, or until set and slightly brown around edges. 
  5. When cooled, cut into squares and garnish with slices of cherry tomato if desired. Best when served at room temperature. Store leftovers in refrigerator. 

Notes:

*If you don't have bisquick mix, you can substitute with 1 cup of flour + 1 1/2 tsp. baking powder + 1/4 tsp. salt + 1 TBS oil=1 cup bisquick mix
