Easy Italian Wedding Soup


I love this recipe for Easy Italian Wedding Soup! Just thinking about those tender little meatballs in the rich chicken broth with that fun shaped pasta, just makes my mouth water! Making this soup from scratch, can be quite labor intensive. That's why I've come up with this easy recipe that uses frozen mini meatballs, instead of making the meatballs from scratch! And, it's every bit as delicious as an Italian Wedding Soup made completely from scratch!

Brrrr....it's January and it's COLD here in northeast Ohio! That means it's healthy comfort food time...that means it's delicious soup weather! If you are looking for the perfect soup to make on a chilly winter day, this Skinny Zuppa Toscana Soup will warm you right up. 

It's made lighter than the restaurant version by swaping pork sausage with turkey sausage and swapping heavy cream with evaporated skim milk. But, this skinny version still delivers on taste! It has got all the flavor of the Olive Garden restaurant classic original recipe, but with less calories

Easy Homestyle Chicken N Dumplings

It has been cold here in Northeast Ohio for the past week. The perfect weather for Chicken N Dumplings. This Chicken and Dumplings recipe is made from scratch, but it's not hard to do! Chicken breasts are bathed in a rich broth with carrots, onions, and celery and then topped with easy made-from-scratch dumplings that are dense and chewy and work to thicken the broth! It's comfort in a bowl.

Turkey and Wild Rice Soup


If you haven't used up all of your Thanksgiving leftovers yet....this is a wonderful soup recipe that should do the trick!  It uses cooked leftover turkey, leftover carrots ( from dinner and from the raw veg tray), leftover celery ( from the veg tray), leftover corn ( from dinner), leftover fresh herbs ( from the turkey and the stuffing that you didn't use up), and all that chicken broth you overbought "just in case"!  lol    I didn't have a turkey carcass at my disposal, but you could certainly add that to enhance the broth if you have one.  And if you don't have the leftovers to make this soup, you could start from scratch too!
