Spiced Pumpkin Bread


Spiced Pumpkin Bread is so moist and flavorful, it's not just another pumpkin bread recipe....it is THE best pumpkin bread recipe out there! It's spicy, sweet and unmistakably FALL. It's also an easy pumpkin bread recipe you'll make again and again.

By now you've probably seen a gazillion things "pumpkin" flavored.  It is, after all, the season of "All-Things-Pumpkin". 

Pumpkin is one of those flavors that just screams Fall. You might be familiar with this recipe for Pumpkin Spice Buttermilk Waffles or this very popular recipe for Easy Pumpkin Spice Pecan Fudge. Pumpkin is EVERYWHERE!

This wonderful spiced pumpkin bread recipe is a way to enjoy pumpkin in your own home. No need to run out and grab a slice of pumpkin spice bread at Starbucks! This recipe is so easy, even the novice baker can put this easy pumpkin bread together with great results!

I love quick breads (aka breads made with baking powder or baking soda that permits immediate baking of the dough or batter)  because they are not only easy, but they can take on many rolls. Not quite a bread or a cake, a slice can be a yummy breakfast treat, a nice dessert or a delicious afternoon snack.

As an added bonus, your house will smell AMAZING while this pumpkin loaf is baking!

What makes this pumpkin bread special?


The spices!!  Specifically... the addition of fresh ground black pepper!!

Yes, that's right. Fresh ground black pepper adds that extra something.

The addition of black pepper, along with cinnamon, nutmeg, and ginger, is amazing in this bread and does not overpower it.  It just adds that certain "something" extra! 

If you aren't brave enough to give the fresh ground black pepper a try, just add a pinch of ground cloves instead. 

I've also substituted cinnamon, nutmeg, ginger, and black pepper for 2 tsp. Chinese 5-Spice (you can buy it or make your own) or 2 tsp. pumpkin pie spice. 

Anyway you decide, it's truly the spices that make the pumpkin bread special. 

What add-ins can I put in this Spiced Pumpkin Bread?

You can add all sorts of yummy additions to this bread! Here's a list of a few ingredients that would go well with this spiced pumpkin loaf. Choose one or two from the list and add them into the batter before spooning into prepared pans.

  • 1/2 cup chopped pecans
  • 1/2 cup chopped walnuts
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup white chocolate chips
  • 1/2 cup raisins
  • 1/2 cup dried cranberries

Tips for the Best Spiced Pumpkin Bread

  • As always with quick bread recipes, do not over mix the batter. A light mix with a spatula is all that's needed when combining the wet and dry ingredients. This will ensure your pumpkin bread will be tender. 
  • Check for doneness with a toothpick inserted into the center of the loaf. All oven heat differently, and your oven may take a few more or less minutes of baking to get a perfectly baked loaf. 
  • It's best to allow your pumpkin bread to cool completely before slicing. I know it can be hard, but since this is such a moist pumpkin bread, allowing it to cool completely will give you the best slices.

Can you freeze Spiced Pumpkin Bread?

Yes. Like any quick bread, you can freeze it for up to 3 months. Defrost before enjoying it. 


I sent this bread with my husband to work, and he said they just inhaled it.   

I enjoyed my slice with a smear of pumpkin butter!!  Why not?

Spiced Pumpkin Bread

Spiced Pumpkin Bread

Moist and flavorful spiced pumpkin quick bread dotted with sweet plump raisins. A Fall favorite!

Ingredients

  • 1 1/2 cups pure pumpkin puree (canned or homemade)
  • 2 large eggs
  • 1/2 cup canola oil
  • 1 cup brown sugar, packed
  • 1 tsp pure vanilla extract
  • 2 cups all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp kosher salt
  • 1 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp fresh ground black pepper
  • 1/4 tsp fresh grated nutmeg
  • 1/2 cup golden raisins

Instructions

  1. Heat oven to 350 degrees F. Spray a 9" x 5" x 3" loaf pan with cooking spray and sprinkle with flour or line pan with parchment or non-stick foil. Set aside.
  2. In a large bowl, combine pumpkin puree, eggs, oil, brown sugar, and vanilla extract with a whisk.
  3. In a medium bowl, combine the flour, soda, salt, cinnamon, ginger, black pepper, and nutmeg.
  4. Add dry to wet ingredient and stir until just combined. Fold in raisins and pour into prepared loaf pan.
  5. Bake for 50 - 60 minutes, or until a pick inserted into center comes out clean. Allow to sit in loaf pan for 10 minutes, then invert onto a wire rack and cool completely before slicing.
