THE BEST Chocolate Chip Cookies!


OK...not exactly a healthy or light recipe...but I have made this chocolate chip cookie recipe now 5 times in the past few weeks...yes five...it's that good.  Maybe they are a bit healthier than traditional chocolate chip cookies because coconut oil is the fat component in these wonderful cookies instead of butter.  What I've learned about coconut oil is that although it is high in saturated fats...the fat chains are different ( smaller)  from those found in animal fats, and are processed more efficiently by the body. You can read all about Coconut Oil HERE on Prevention RD, as Nicole, a registered Dietician answered my question about this fat.  All I know is that this cookie is fabulous in texture and taste.  The coconut oil ( depending on the brand you use ) can impart a slight coconut flavor to the cookie.  If you like coconut, it is really a pleasant surprise.

In the five times I've made this recipe in the past month, the batches I made with coconut oil that was almost tasteless, did not leave the cookies with any coconut flavor and you couldn't tell the coconut oil was in there.  I made other batches with Trader Joe's Organic Virgin Coconut Oil, and it DOES impart a light coconut flavor...so whether or not you get the coconut flavor from the oil depends upon the oil you use. 


I also made a batch with some added toasted coconut and traded out part of the flour for whole wheat.  My family unanimously decided just the plain cookies made with all AP flour were the best tasting. 



The cookie, thanks to brown sugar exclusively as a sweetener, is soft and chewy on the inside and slightly crisp on the outside...but after they are stored in a closed container, the cookies go all soft and chewy. 

The best part?  you don't have to wait for your butter to soften...lol

I give very few recipes the title of "THE BEST"...but this one has definitely earned this honor.  


THE BEST Chocolate Chip Cookies!



Servings - approx. 40   Serving Size - 1 cookie   Points Plus per Serving - 3 Points +
Calories - 109.1,   Total Fat - 5.5g,   Carb. - 17.3g,   Protein - 1.2g,   Fiber - 0.6g 


1/2 cup coconut oil
1 cup + 1 TBS brown sugar, packed
2 large eggs, room temperature
1 TBS. pure vanilla extract
1 3/4 cup all purpose flour ( you can sub part of the flour for whole wheat) 
1/2 tsp. salt
1 tsp. baking powder
1/4 tsp. baking soda
12 oz. semisweet chocolate chips 


1.  Preheat oven to 375 degrees F.  Line baking sheets with parchment paper or use silpat.  

2.  In large bowl, beat together the coconut oil and brown sugar with mixer.  Add in the eggs and beat until fluffy.  Add in the vanilla extract. 

3.  In med bowl, combine the flour, baking soda, salt and baking powder with whisk.  Mix the flour mixture into the coconut oil mixture with a wooden spoon until all the flour is incorporated.  Add in the chocolate chips and mix well.  

4.  Drop by rounded TBS onto prepared baking sheets.  ( I used a cookie scoop ) Flatten the balls a little with your fingers, if desired before baking.  Bake for approx. 8 - 10 minutes or until slightly browned around the edges.  Let rest on cookie sheet for a few minutes before removing to rack to cool completely.  Store covered.

I want to give credit to the original site I found this recipe off of...although truth is, I altered it quite a bit.  The problem is, this site didn't have a print option, and I had to copy and paste and don't have the  original link.  I will need to go back and see if I can find it and then I will add it.  

Honestly, I will say it again...my NEW go to chocolate chip cookie recipe...Soooo good!

  3. Renee, I don't think I'm getting updates from your blog any more! This happened to me with another blog too and I have NO idea how to fix it or why it is happening to me but I hate it b/c I rarely remember to check blogs that I don't get email updates from. Boohoo! Anyway, I saw your question on Prevention RD! These do sound really good, and my gramps was just singing the praises of coconut oil today. He is a major health nut and says that it has even cured cancer (he reads LOTS of articles about health). Way cool--cancer fighting chocolate chip cookies! lol

    1. oh no...I don't know why. Sometimes I think blogger has bugs. Maybe try unsubscribing and then resubscribing? YES! I have been doing a little research on it too...and it does have antibacterial and antifungul properties...can be used to cure and prevent yeast infections! crazy! All I know is it really makes these cookies good...lol in fact, I planning on baking up a batch this morning to take to my brother later today! :)

  7. Hi Renee. This looks like a FANTASTIC recipe. I have bookmarked it and will give it a go. (I really must get on the coconut oil bandwagon, I've walked by it a zillion times in the grocery store but have never picked it up) Hope you and your fam have a great weekend!!!!

  9. I found the original recipe (http://www.cheekykitchen.com/2010/09/chewy-chocolate-chip-cookies.html) and your version today when I needed to make cookies and was short on butter! I used the original one, but my cookies really flattened. Did you make try one first, or did you change the brown sugar amount before you even made them? I'm wondering if that would make a difference. Her cookies are nice and high, but then she used a huge scoop. I just used a regular cookie scoop. I pride myself on the texture and height of my cookies, so I want to solve this one!

    I especially love the taste of the dough... yum!

  10. I'm pretty sure this is not the website I grabbed the recipe from...because I remember the one I used talked about chilling the dough over night being a KEY step. I don't normally chill the dough, unless the coconut oil is liquid at room temp because it's hot in the kitchen. Then I just chill for 20 min or so. The recipe I got may have gotten their recipe from this site, because, yes, the ingredients look very much the same.

    I started out by decreasing the amount of sugar. Besides trying to lessen the overall amount of sugar in the recipe. By doing so, I likely decreased the overall moisture in the cookie, helping mine to not be flat. I've made them many, many times now, and I never have the problem of a very flat cookie. I use a regular sized cookie dough scoop also, and then press them down ever so slightly before I bake.

    I have even used half butter half coconut oil to make them. They are still good, just not as soft and chewy using all coconut oil. A little different flavor as well. They don't go flat either.

    If you used my version and they were still flat, perhaps chilling the dough a bit might help?

  11. These did not turn out for me...most fell apart when I tried to move them to a cooling rack, even after letting them sit for a few minutes on the sheet. The few that didn't fall apart when taking off the sheet fell apart when I picked them up. Not sure what happened.

  13. Renee, I am new to coconut oil, but not new to baking.. I made a choc chip cookie recipe from a different blogger, followed directions exactly and the cookies came out completely flat (so I crumbled them up and will be putting them in fudge). any tips how to avoid this? I did use the coconut oil directly out of the jar, per instructions. Also for recipes that call for melted coconut oil, do you measure it out - i e 1/2 cup before you melt, or melt and then measure?

    1. I'm sorry to hear you didn't have success. It's hard for me to answer this question because you say you used a recipe from a different blogger, and I do not know what that recipe is. I haven't made these in awhile, but I was on a huge kick making this recipe for a long time over and over again, and always had success with the one above. They aren't super fluffy, but more like tollhouse cookies as far as height. Coconut oil should measure exactly like butter in recipes. No change. I've not made recipes with melted coconut oil, so I can't answer that question. I have only used it solid.
