Thanksgiving Leftovers Casserole and lots of ideas for Thanksgiving Leftovers!

After the big Thanksgiving many of us are faced with a fridge full of leftovers and few ideas on how to re-create them into a whole new meal?

This casserole is a tasty way to use up some of those leftovers or (if you are missing a leftover or two) make from scratch.  Leftover stuffing makes the "crust" layer, followed by a creamy turkey/vegetable layer then topped with cheesy mashed potatoes.  It's easy to assemble and only takes 30 minutes to bake up!

I'll be honest, when I made it, I was really skeptical.  I didn't think this would be something myself or my family would like...but we ended up really enjoying it.

I have to admit, my family is not big on leftovers.  We will usually do one more meal after Thanksgiving with the leftovers in their original state, but after that, they just seem to sit.

When I am able to re-create those leftovers into something different, my family is more apt to eat them.  Since I hate wasting food, I like having an arsenal of ideas to use them up with.  If I haven't given you enough places to find inspiration yet, here are a few more great ideas to use up those leftovers.

Easy Biscuit Topped Turkey Pot Pie
Easy Turkey and Wild Rice Soup
Classic Ham and Bean Soup
Mediterranean Turkey Salad
Turkey and Cranberry Slaw Wrap (substitute the deli turkey for chopped leftover turkey and mix into the slaw before putting into wrap)
Pressed Turkey, Pear, and Cheese Sandwich
Lightened Up Sweet Potato Pie...make it with your leftover sweet potatoes!
...So there you go!
Lots of great ideas for all of your leftovers!  I hope that one of these recipes will inspire you to re-create this year!

Does your family eat leftovers?  Have you ever used leftovers to create a whole new meal?

  1. Does this casserole not scream comfort or what? We usually have leftovers but I traditionally make soup, salads or sandwiches! Nothing crazy ;)

  2. What great ideas! I'm in love with leftovers, but my husband doesn't like them so much so reinventing them is a must at our house. This casserole looks delicious and your other links are great ideas as well!

  3. These are great ideas and I'm sure we'll have a ton of leftovers this year. Thanks!

  4. Looks like you have the leftovers covered Renee! Lots of good ideas and recipes galore. My mom usually divided up her leftovers and sends them home with the guests so she isn't left with too much. I will probably do the same thing this year since we are empty nesters!

  5. I love leftovers! These are great ideas!
I especially like the Classic Ham and Bean Soup and the lightened Up Sweet Potato Pie!
