Have you ever had carrot raisin salad from Chick-fil-A? Oh my gosh, I love that stuff! This version is that classic carrot salad recipe kicked up a notch with coconut! Tropical Carrot Raisin Salad is almost good enough to eat as a dessert! You are going to love this carrot salad recipe!
To keep calories in check, this salad is made with fat free Greek yogurt. I've made this recipe a few times now and each time I used a different flavor of Greek yogurt. I've tried it with fat free vanilla, fat free toasted coconut, and fat free plain with the addition of 2 tsp. honey. For me, I liked the plain yogurt with the honey the best...but feel free to use whatever flavor of Greek yogurt you like.
I also only used ONE carrot.

Super carrot weighed in at almost an entire pound!!!! ...and it was plenty enough to make this salad.

Now, back to the carrot salad recipe.
This is a great carrot salad recipe to serve alongside dinner or as a side with a sandwich at lunch or even just as a snack. If you are a fan of carrot raisin salad...you will love this lighter tropical flavored version!
Tropical Carrot Raisin Salad

Ingredients
- 1 pound of carrots, peeled and shredded
- 3/4 cup golden raisins
- 1/4 cup crushed pineapple, in 100% juice, drained
- 3 TBS sweetened, shredded coconut
- 1/4 tsp. salt
- 1/2 cup fat free Greek style yogurt (vanilla, coconut, or plain)
- 1/4 cup reduced fat mayonnaise
Instructions
- Combine all ingredients in a large bowl. Refrigerate for 30 minutes before serving to allow raisins to plump and flavors to meld.
Prep Time: 00 hrs. 10 mins.
Total time: 10 mins.

These carrots I have been getting from a small, local market are just crazy in size! They are from Canada, and you might think because of their size they might not taste so good, but they are amazingly mild and sweet!! I love them, because I hate, hate, hate peeling skinny carrots! lol
How about you? Is peeling produce a chore you hate? Have you ever seen a carrot as big as "Super Carrot" ?
mmmmmmmmmmmmmm Sounds delicious! I love carrots in any form :) Chickfila is one of the best fast food spots (we only ever go there and Chipotle/Qdoba for fast food)
