Easy Strawberry Bundt Cake

Easy Strawberry Bundt Cake is a recipe you'll want to add to your collection of easy and tasty cakes!  It starts with a boxed white cake mix that is transformed into a beautiful PINK moist strawberry cake with the addition of a box of strawberry jello and either fresh or frozen strawberries. This easy strawberry bundt cake is BURSTING with strawberry flavor!

Get ready for this month's Secret Recipe Club reveal. This month I was assigned to the blog An Affair From The Heart I squealed with delight when I opened the email that said this was the blog I got to cook from this time around!  

You see, Michaela was assigned MY blog last month to cook from and I was so excited to pay the wonderful comments and reviews she gave me forward!

Michaela is a stay at home mom to 4 kids and is married to the love of her life for over two decades now.  As I read Michaela's "about page" it was uncanny exactly how much we had in common!

I knew once I started browsing her recipes, it was going to be a tough choice for me to narrow it down to one recipe.  We both seem to like many of the same kinds of recipes!

Michaela and I have sort of "known" each other for some time now through mutual blog sharing groups.  I've always loved Michaela's recipe choices and have drooled more than once over the recipes she shares, but I have never had the opportunity to dive into her blog and make something from it. 
So I started making a list of recipes to make from her site.  When I was done, I had 20 or so recipes that I wanted to try!

But, since I can only present ONE recipe today, I decided to go with this extraordinarily delicious strawberry cake recipe. Micheala explains that this is a cake recipe that she received from a friend.  (Aren't those the best kind of recipes?)

Micheala made a standard round, two layer frosted cake from this recipe, but I decided to go the Strawberry Bundt Cake route, because who doesn't love Strawberry Bundt Cake?

Let me tell you, we LOVED this cake!  
It is just bursting with BIG strawberry flavor and that color...OH MY....just gorgeous!  I also love that this cake starts with a boxed mix.  I am a huge fan of doctoring up boxed cake mixes and turning them from ordinary into something extraordinary and this cake recipe does exactly that.

Jello in a Strawberry Bundt Cake?

Yes! Sugar Free strawberry jello adds wonderful strawberry flavor and a beautiful pink color to the cake. 

By using sugar free jello, you aren't adding more sugar to the recipe. But, if you are avoiding artificial sweeteners, you could absolutely use a box of regular strawberry jello instead. I made a few other changes from the original recipe besides swapping regular jello for sugar free. I also reduced the oil and added more strawberries in this recipe. 

I frosted my strawberry bundt cake with a buttercream glaze that I drizzled over the top of the cake once it was cool. This strawberry bundt cake is super moist and full of delicious strawberries and is the perfect cake for just about any occasion!

This Easy Strawberry Bundt Cake will be making more appearances at my house in the future!  

I also will be finding some time to make a few other recipes from An Affair From the Heart....like Grandma's Baked Beans and Crock Pot French Onion French Dip Sandwiches in the upcoming weeks and put a dent in that long list of "must make" recipes I made!

Easy Strawberry Bundt cake starts with a boxed cake mix that gets transformed into a beautiful PINK moist strawberry cake BURSTING with strawberry flavor!


For Cake:
  • 1- 16 oz. boxed white cake mix
  • 3 TBSP all purpose flour
  • 3 large eggs
  • 3/4 cup water
  • 1/2 cup canola oil or vegetable oil
  • 1- 4 serving package of Sugar Free or regular strawberry flavored gelatin
  • 3/4 cup chopped,fresh or frozen strawberries, partially thawed
For Glaze:
  • 1/4 cup unsalted butter
  • 1 1/2 cup powdered sugar
  • 3 TBSP to 1/4 cup milk (adjust to get the correct consistency)


  1. Preheat oven to 350 degrees F. Spray non-stick surfaced 10 cup bundt pan with cooking spray. Set aside.
  2. In large bowl, combine all cake ingredients except strawberries and mix with electric mixer on low until combined, then on high for about 2 minutes. Fold in strawberries. Pour into prepared bundt pan and smooth surface.
  3. Bake for 40 - 45 minutes or until toothpick inserted into center comes out clean. Cool in pan for 10- 15 minutes, then invert onto serving plate and cool completely.
  4. While cake is cooling make the glaze by combining e butter, powdered sugar, 1/2 teaspoon vanilla and milk. Adjust the amount of milk to get the consistency you desire for the glaze.
  5. Once cake is completely cooled, glaze the top. Allow glaze to set before serving.

  17. This recipe sounds wonderful! Could you substitute strawberry cake mix for white and use strawberry crème Jello pudding instead of strawberry gelatin?

    I wonder if it needs refrigerated?

  19. I'm making this tomorrow. It's the same as my strawberry cake recipe that I've used for years but just in a bundt cake pan. I am going to try using the thicker frosting it calls for and not the glaze - I think. I believe I could just add strawberry juice or milk and think it down...... I'll post a picture.

    1. Hello! Thanks for your question. You can freeze this cake if you wrap it tightly in plastic wrap and then in foil for a couple of months and defrost before serving.

  21. I made this cake yesterday and it was a big hit for my Bunco group. I noticed that the frosting instructions called for vanilla but the ingredients list didn't. I added a little then tasted and added a little more. The amount I added might have been 1/2 teaspoon. After frosting, I filled the center with fresh strawberries. It was delicious and beautiful. Thank you 😊

  24. This recipe sounds delicious. I was wanting to know if I make it in mini loaf cakes, how long and what temperature to bake it at?

    1. Hi! Thanks for the question. I've never made this recipe in mini loaf pans, but from looking at info on the web, it looks like if you keep the same temperature and reduce baking time by 25% you should have success. Good luck and let us know how they turn out!
