Easy Cheesecake Bars with Triple Berry Swirl

Triple Berry Swirl Cheesecake Bars are so easy to make and come out perfect every time! If the thought of making cheesecake is scary to you, THIS recipe is for YOU! Creamy and delicious cheesecake squares with a graham cracker crust and a fun berry swirl is sure to please any cheesecake lover.

If my husband could eat any kind of cake, cheesecake would be his number one choice. He usually requests cheesecake for his birthday and wants to make sure it's a dessert choice at most family gatherings.  

But anyone whose made cheesecake before knows, it can be tricky. Not this recipe. These bars could not be any easier nor fool proof to make.

I found the original recipe over at Nestle.com and adapted it to use up some triple berry jam I had in the fridge. These cheesecake bars came out terrific!  

They are sturdy enough to travel and actually do well sitting out at room temperature for several hours, so they'd be a good choice for a picnic or gathering when you need to serve or bring something sweet to share.

Easy Cheesecake Bars with Triple Berry Swirl

Easy, foolproof triple berry swirl cheesecake bars featuring a graham cracker crust—the perfect, travel-friendly dessert for any occasion!

Ingredients

For crust
  • 2 cups graham cracker crumbs
  • ⅓ cup granulated sugar
  • ½ cup unsalted butter, melted
  • pinch of salt
For cheesecake filling
  • 2 - 8 oz. packages of cream cheese, softened
  • 1 cup granulated sugar
  • ¼ cup all purpose flour
  • 1 - 12 oz. can of evaporated milk
  • 2 large eggs, room temperature
  • 2 tsp. pure vanilla extract
  • 1 cup triple berry jam or jam flavor of your choice

Instructions

For crust
  1. Preheat oven to 325 degrees F.
  2. Prepare crust by combining graham cracker crumbs, 1/3 cup granulated sugar, melted butter and pinch of salt in an ungreased 13" x 9" glass baking dish and press down on the bottom firmly to form a crust. Set aside and continue with recipe.
For Filling
  1. In a large bowl, with an electric mixer, combine the cream cheese, 1 cup granulated sugar and flour until smooth. Gradually beat in the evaporated milk, eggs and vanilla until combined.
  2. Remove 1 cup of the cheesecake filling mixture and put into a small bowl and set aside. Pour the remaining cheesecake filling onto the prepared crust.
  3. Combine 1 cup of jam with the reserved 1 cup of cheesecake filling. Mix until combined. Pour mixture over the cheesecake filling in the pan. Swirl mixtures with spoon, pulling up the plain cheesecake mixture to the top.
  4. Bake for 40 - 45 minutes or until set. Remove from oven and cool to room temperature. Refrigerate until firm (about 2 - 3 hours), then cut into bars.
  5. Store leftovers in refrigerator in an airtight container.
