I'm smiling from ear to ear.  Do you know why?  Because Silk® has come out with three NEW non-dairy, gluten-free, non-GMO, and soy-free Almond creamers! And...they do not contain any artificial flavors or colors.

I'm happy because some time ago, my son went dairy-free. Ever since he eliminated dairy in his diet, I've been keeping dairy-free alternatives in the house for him and have cut back on dairy myself. However, until now, I have not found a suitable dairy-free creamer for my morning coffee. 

I love that Silk® Almond Creamers are available in three flavors: Caramel, Vanilla, and Hazelnut! My favorite, so far, is the caramel flavor.  Nutty with the luscious taste of caramel in a non-dairy, cholesterol free liquid.  It makes my morning coffee creamy without having to use dairy cream!

Since my son will be home from college next weekend, I picked up a few cartons of Silk® Almond Creamer for him to take back with him and came up with this wonderful breakfast recipe he can make for himself at school. 

If you've never made nor enjoyed overnight oats, you are really missing out! This on-the-go breakfast option can be made ahead of time and can be eaten cold or heated up in the microwave for an instant, wholesome breakfast anytime. I make mine in half-pint canning jars so they are easy to pop into a backpack when you need to take a breakfast with you. They even make a great afternoon snack! 

The addition of Silk® Caramel Almond Creamer in this recipe gives these overnight oats a yummy sweet nutty caramel flavor, which pairs absolutely perfectly with the cinnamon apples! Topped with a few toasted walnuts, it's breakfast perfection!

This is such an easy recipe to put together. You start by sauteing fresh apples (I used Fuji). Coconut oil works well if you want to keep the recipe dairy free. Once the apples are all soft and cinnamon coated, you mix up your oats, pour on the Silk® Almond creamer and the Silk® Vanilla Almond milk, then top with the cooked apples. Seal jars and refrigerate for several hours to up to a few days. The oats will soak up all the almond creamer/almond milk and soften and get creamy! When you are ready to enjoy them, just open, toss in a few chopped walnuts, stir and enjoy!

Caramel Apple Overnight Oats

Caramel Apple Overnight Oats
Wholesome oats are combined with Silk® Almond Creamer and milk, cinnamon apples and walnuts for a great on-the-go breakfast.

Ingredients

  • 4 half pint canning jars and lids
  • 2 cups old fashioned or quick cooking oats, divided
  • pinch of kosher salt
  • 1 cup chopped apple (peeled- I used Fuji)
  • 1/2 tsp. ground cinnamon
  • 1 tsp. brown sugar
  • pinch of kosher salt
  • 2 tsp. coconut oil
  • 1 cup Silk® Caramel Almond Creamer, divided
  • 1 cup Silk® Unsweetened Almond Milk, divided
  • 1/4 cup chopped, toasted walnuts, divided

Instructions

  1. To each jar, add a 1/2 cup oats and a pinch of salt. Set aside.
  2. In medium skillet, heat coconut oil over med-high heat. Add in the apples, cinnamon, and brown sugar and saute until apples are soft and start to caramelize. Take off heat.
  3. To each jar with oats/salt, add 1/4 cup Silk® Caramel Almond Creamer, then add a 1/4 cup Silk® Unsweetened Vanilla Almond milk to each jar.*  Stir.
  4. Top each jar with 1/4 of the apples and push down. Seal with lids and refrigerate for several hours or overnight (up to several days).
  5. To serve, take off lid, add about 1TBS walnuts stir and enjoy! You can also heat oats with lid off in microwave on HIGH for about 1 minute, stir and enjoy.
Yield: 4 servings

Total time: 10 mins. (plus chill time)

*If you like your oats looser, add more almond milk.  If you like them thicker, add a little less.

  5. YUM! I made my first overnight oats recently and loved them. I am not a cereal eater, hubby is. BUT the overnight oats won me over big time. I'm going to try your recipe and the creamer! While we do eat cheese and cream on occasion, we do not drink milk and only by almond or cashew milk. The caramel creamer sounds divine in this recipe!
