Slow Cooker Salisbury Steak

Put your slow cooker to work and make what my husband calls, "the best salisbury steak" he has ever eaten! Tender Slow Cooker Salisbury Steak comes together in a snap. Browned Salisbury steak patties are slowly cooked in a rich onion gravy and served over mashed potatoes for healthy comfort food you are going to love!

The real secret is in the gravy...but you'll have to read on to find out just what that secret ingredient is!

Here in the Midwest, we love good meat and potatoes recipes like this Slow Cooker Salisbury Steak.

Lean ground beef sirloin is seasoned and transformed into patties, quickly browned, and then smothered in a rich onion gravy to simmer all day in the slow cooker. Once it's done, I serve it on a pile of creamy mashed potatoes and cover it in that rich onion gravy!

This isn't the first time I've shared an easy salisbury steak recipe. You might be familiar with the recipe for Lightened Up Salisbury Steak I shared several years ago.

In that recipe, mushrooms are added to ground sirloin to bulk it up without adding too many calories. It's a delicious salisbury steak recipe too, but it's made completely on the stove top.

In this version, most of the work is done by the slow cooker and the end result is a tender Salisbury steak that practically melts in your mouth.

This Slow Cooker Salisbury Steak is not only a healthy ground beef recipe but it is the perfect fix-and-forget recipe!

How do you make Salisbury Steak in the Slow Cooker?

It's easy to make salisbury steak in the slow cooker.  Mix lean ground beef sirloin with seasonings, bread, milk, and egg. 

Next, evenly divide the mixture and form into patties. (Don't forget to add a little divot in the center of each patty so that it won't swell during the browning process.)

I like to form the patties and refrigerate the night before I plan to serve Slow Cooker Salisbury Steak. (They can also be formed the day you make it too!)

Then I just brown them up in the morning and place in the slow cooker with sliced onions and the gravy mixture.

I brown the patties in batches, to help get that golden brown color on each salisbury steak!  That color is flavor and you don't want to skip this step!

Once browned, I place salisbury steaks on top of sliced onions and smother them in the gravy mixture to cook. That's all there is to it!

What is the difference between salisbury steak and hamburger steak? 

There's very little difference between salisbury steak and hamburger steak. Hamburgers generally, are seasonings and meat. No binders.

Salisbury steak is closer to meatloaf, in that you usually find binders such as bread and eggs. The addition of a binder helps hold the patty together and gives a different texture to the meat.

Some recipes for Slow Cooker Salisbury Steak will have you thicken the gravy at the end of cooking with cornstarch, but you won't need to do that in this one.

The secret ingredient in the gravy?

It's instant coffee!

That's right. You are just going to have to believe me on this one! A 1/2 tsp. to 1 tsp. of instant coffee dissolved in the gravy mixture richens it up and gives it a deep flavor.

Trust me on this! You will not taste the coffee in the gravy, but you will taste a richness that compliments the beef flavor perfectly. If I haven't convinced you, you can, of course, leave it out.

We love to eat Slow Cooker Salisbury Steak with mashed potatoes and it's particularly good with Garlic Parmesan Mashed Potatoes.

But, Slow Cooker Salisbury Steak is also great when served atop egg noodles or rice.

Slow Cooker Salisbury Steak

Slow Cooker Salisbury Steak comes together in a snap. Browned Salisbury steak patties are slowly cooked in a rich onion gravy and served over mashed potatoes for healthy comfort food you are going to love!

Ingredients

  • 2 to 3 slices white bread, torn into small pieces
  • 2 TBSP dried onion
  • 1/2 cup 2% milk
  • 1 1/2 to 2 pounds lean ground beef sirloin (90/10) (I used Certified Angus Beef ® brand)
  • 1/2 tsp. dried thyme
  • 1 to 1 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1 TBSP Worcestershire sauce
  • 1 large egg, slightly beaten
  • 1 TBSP olive oil, for browning
  • 1 cup sliced onion (about 1 medium onion sliced)
  • 1 - 12oz. jar of prepared beef gravy
  • 1 - 10 1/2 oz. can of condensed cream of mushroom soup (I used low fat)
  • 1/2 tsp. instant coffee granules (optional, but so good!)

Instructions

  1. In large bowl, combine the bread pieces, dried onion, and milk. Allow the bread to absorb the milk for a minute or two, then with a fork, break it up until it gets to a paste like consistency.
  2. To the bowl, add the ground beef, dried thyme, salt, pepper, Worcestershire sauce, and egg. Combine well. (I use my clean hands to mix). Mix until everything comes together.
  3. Divide meat up into 5 or 6 portions. Form each portion into patties, making a small divot in the center of each one. Set aside.
  4. Heat a large skillet over med-high heat. Add olive oil. When the oil begins to shimmer, brown patties (in batches if you need to) on each side. About 2 minutes per side.
  5. Place sliced onion on bottom of slow cooker.
  6. Add browned Salisbury steak patties on top of sliced onion.
  7. In small bowl, whisk together gravy, cream of mushroom soup, and instant coffee granules. Pour mixture over browned Salisbury steak patties and onions in slow cooker. Cover and cook on LOW for 6 hours or on HIGH for 4 hours.

  6. This was so good! Followed recipe exactly. Except I got a late start making it, so I ended up finishing it in oven. Will DEFINITELY make again! (And do in crockpot next time)
